Quick Vanilla Cake

 



  • 2 Eggs
  • 40 gms powdered sugar
    • Beat well until light and foam.
  • 1/2 tsp vanilla essence
    • Mix for few seconds.
  • 40 gms flour or cake flour
    • Sift the flour into the egg mix.
    • Gently fold the flour and mix well.
    • Pour the batter into a pan.
    • Remove the bubbles using a toothpick.
    • Preheat the oven 175C for 10 minutes.
    • Bake for 20 minutes or until a toothpick comes out clean.
  • For Sauce:
    • Pour chocolate ganache on top.

Beetroot Chocolate cake



What I need to bake:

  • 2 beetroot pureed roughly around 200 gms 
  • 1/2 tsp vanilla extract
  • 1 1/2 cup sugar
  • 250 ml oil
  • 3 eggs
  • 2 cups flour
  • 1 1/2 soda bicarbonate
  • 6 tbsp cocoa powder
  • 1/2 tsp salt
How I mix:
  1. In a large bowl pour the beetroot puree.
  2. Add the sugar and oil.
  3. Add the eggs one by one.
  4. Then add the vanilla essence.
  5. Mix with a electric beater until well mixed.
  6. In another bowl sieve flour, cocoa, salt and soda bicarbonate.
  7. Add to the creamed mixture the dry ingredients.
  8. And mix well.
  9. Preheat the oven @ 175 C.
  10. Pour the mixture into a greased tin or lined by baking sheet.
  11. Bake it until a tooth pick comes out clean for 30 minutes.

Ghee Cake

Ingredients:

  • 3 eggs
  • 2 tbsp ghee
  • 100 gm fresh cream
  • 3/4 cup sugar
  • 3/4 cup flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda

Step by Step

  1. Beat sugar, eggs and ghee until smooth.
  2. Then add cream and beat well
  3. Sieve flour, baking powder and baking soda.
  4. And then add the dry ingredients to the wet.
  5. Mix well.
  6. Preheat the oven for 175C for 5 mints.
  7. Pour the mixture in a pan and bake for 20 minutes or until a tooth pick comes out clean.

Orange Bundt Cake

Ingredients:
  • 2 1/2 cup flour
  • 2 1/2 tsp baking powder
  • 4 eggs
  •  1 1/2 cup sugar
  • 1 cup vegetable oil
  • 1 1/4 cup freshly squeezed orange juice
  • Orange zest from the oranges  used.
  • 1 tsp vanilla extract

Instructions:

  1. In a bowl whisk flour and baking powder.  Keep aside.
  2. Whisk together eggs and sugar until pale and  fluffy.
  3. Add oil into it when the mixer is running slowly.
  4. Add orange juice, zest and vanilla extract until all well combined.
  5. Add the flour mixture and mix util all combined.
  6. Preheat the oven to 175C for 10 minutes.
  7. Spray the bundt pan or apply butter.
  8. Pour the batter into it.
  9. Bake for 50- 60 minutes or until a toothpick comes out clean.
  10. Allow cake to cool completely.

Date Cake

Ingredients:
  • 20 Deseeded dates
  • 1 cup milk
  • 3/4 cup brown sugar
  • 1/2 cup + 1tbsp Oil
  • 1 1/2 cup flour or wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • a pinch of salt
  • 1/4 tsp cardamom powder
  • Optional 1/4 cup walnut or cashew chopped.

Method:

  1. Soak 20 dates without seeds in milk.
  2. Leave it aside for 4 hours.
  3. Grind the dates with milk after 4 hours .
  4. In a bowl add the brown sugar.
  5. Add the oil into it.
  6. Using a whisk beat well.
  7. Sieve the flour. To this add the flour and mix well.
  8. Add baking powder, baking soda and salt.
  9. Now combine using a whisk.
  10. Add the date paste gently and mix well.
  11. Optional to add walnut or cashew chopped .
  12. Pour the batter into the lined baking tray.
  13. Preheat the oven to 175°C for 10 minutes.
  14. Lets bake for 35 to 45 minutes.
  15. check with a toothpick if the cake is done.
  16. Slice it only after the cake is cooled.

Pineapple upside down cake



Ingredients:

For the topping
  • 10 slices of canned pineapple
  • 50 grams of butter
  • 1/2  cup brown sugar
  • cherries if you have

For the Cake
  • 1  1/3 cup flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup sugar
  • 1 large egg
  • 1/2 cup milk
  • 50 gms butter
  • 1 tsp vanilla essence
----------------------------------------------
Method:

  1. In a bowl mix flour, baking powder and salt.
  2. To this mixture add the milk, sugar, eggs, butter and vanilla essence.
  3. Beat with a mixture for a minute.
  4. Beat it until the mixture turns the colour.
  5. Keep aside.
  6. Melt butter and brown sugar.
  7. Then divide the mixture in all the moulds.
  8. Place pineapple on top  & cut depending on the size.
  9. Preheat the oven for 10 minutes @ 175C.
  10. Pour the batter into the moulds. 
  11. Bake for 20-30 minutes until toothpick comes out clean.
  12. Once baked, run a knife around the edges of the cakes.
  13. Invert the cakes into a plate.
  14. Serve warm, with a scoop of ice cream.

Chocolate carving Cake




Ingredients:
  • Cake
    •  1 cup flour
    • 1 cup sugar
    • 1/2 cup cocoa powder
    • 3/4 tsp baking powder
    • 3/4 tsp baking soda
    • 1/2 tsp salt
    • 1 large egg
    • 1/2 cup milk
    • 1/4 cup vegetable oil
    • 1/2 cup boiling water or coffee
    • 2 tsp vanilla essence
  • Frosting
    • 1 1/2 cup chocolate chips
    • 1 cup double cream
    • 1 tbsp butter

Method:

    1. Mix flour, cocoa , baking powder. baking soda and salt in a bowl.
    2. Add in egg, milk, vegetable oil and vanilla essence.
    3. Mix in a low speed until all well mixed.
    4. Then increase the speed for 2 minutes.
    5. Then add boiling water  and gently mix well.
    6. Preheat the oven @175 for 10 minutes.
    7. Pour the batter into a pan. 
    8. Bake it for 30- 35 minutes until a toothpick comes out clean.
    9. Cool the cake.
Frosting.:
    1. Put the chocolate chips in a deep bowl.
    2. Bring it to just boil the cream and butter.
    3. Pour oven the chocolate chips.
    4. Leave it for a minute.
    5. Then mix well until it all melts.
    6. Spread over the cake.

Almond cake


Ingredients:


  • 5 eggs separated
  • 200g sugar
  • 1 tbsp flour ( or cornflour)
  • 225 gms almond powdered
  • 1 tsp almond extract
  • 1 tsp baking powder

Method:



  1. Beat yolks with sugar until light and fluffy.
  2. Drizzle the almond extract while the yolks are mixing
  3. Add flour , continue beating.
  4. Add baking powder and a pinch of salt while beating.
  5. Add the almond meal and continue mixing.
  6. When the batter gets firmer.
  7. Add the egg white which is beaten well , spoon by spoon.
  8. Preheat the oven @ 175 C for 10 minutes.
  9. Pour the mixture into a 9inch tin.
  10. Bake for 1 hour or until when a toothpick comes out clean.

Gooey Cake



Ingredients:

  • 200 g unsalted butter
  • 200 g semi-sweet chocolate chips
  • 5 large eggs
  • 1 cup sugar
  • 1 tbsp flour
  • 1 tsp vanilla essence

Method:
  1. Melt butter and chocolate chips in a deep pan @ low heat.
  2. Add sugar to fully mix.
  3. Let it cool.
  4. Add eggs one by one and mix well.
  5. Add the flour and stir.
  6. Add vanilla essence and mix well.
  7. Pour in pan and bake it @175C for 25 minutes.
  8. Bake until the sides of the cake pull in.
  9. Let it cool and then transfer to a cake plate.

Rick Bayless Rustic Chocolate Cake



Ingredients:

  • 100 grams butter
  • 100 grams chocolate (Dark , I used milk)
  • 3 eggs
  • 3/4 cup sugar
  • 1 tsp vanilla essence
  • 1/2 tsp salt
  • 1/2 cup flour
Method:

  1. In a pan, melt butter and chocolate stirring every few seconds until the mixture is smooth. 
  2. Allow to cool
  3. In a large bowl combine sugar and egg , beat at a high speed until mixture is fluffy.
  4. Beat in vanilla and salt.
  5. Stir in the chocolate mixture, then flour stir until batter is uniform.
  6. Preheat the oven @ 175C.
  7. Pour into the pan.
  8. Bake for 40-45 minutes.
  9. Slice once the cake is cool.
  10. Sprinkle icing sugar on top.

Chocolate Cake




Ingredients:

  • 1 3/4 cup flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 cup hot coffee
  • 2 extra -large eggs
  • 1 tsp vanilla essence

Method
  1. Sift the flour, sugar, cocoa , baking powder, and salt into the bowl and mix well.
  2. Combine the buttermilk, oil, eggs and vanilla. 
  3. Slowly add the wet ingredients to the dry with beater still on.
  4. Add the coffee and stir just to combine.
  5. Scrap the bowl with a rubber spatula.
  6. Preheat the oven to 175C. 
  7. I used 2 8in rounds.
  8. Pour the batter into the prepared and bake for 35 -40 minutes.
  9. Cool in the pans for 30 mts.

Chocolate Cake ....... by Life's a feast

Just love the way .... the chocolate cake by life's feast...... and out come was excellent.... did a bit of change for the icing...!!

Here goes the recipe..

Ingredients:

  • 175 grams flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tbsp cocoa powder

  • 150 grams sugar ( I did powder it)

  • 2 eggs lightly beaten

  • 150 ml warm milk

  • 150 ml oil

  • 1 tsp vanilla essence

  • ( she did use 1 tsp of cinnamon powder)

Method:

  1. Put the flour, baking powder, baking soda, sugar and cocoa powder in a large mixing bowl and mix well.

  2. In a separate mixing bowl, whisk together eggs, warm milk, oil and vanilla essence.

  3. Make a hole in the center of the dry ingredients and pour little of the liquid mixture .

  4. Mix them well  and repeat it until all the ingredients are mixed well.

  5. Preheat the oven at 175C.

  6. Pour the batter into a tin and bake for 30 minutes.

  7. Let it cool for 10 minutes.





For the Icing: ( As for the icing work my daugtie wanted to do it so I think that's quite a work on a 9 year old kid)
  • 1/2 cup icing sugar

  • 3 tbsp vegetable shortening

  • 1 tbsp cocoa powder

  • 2 or 3 tbsp warm water

Beat the shortening then add icing sugar.
Add cocoa powder and continue beating them until .
Add warm water little by little and depending upon consistency you want.
Pour over the cake .

Chocolate Tray Bake

 This is a lovely recipe if you looking for a cake that would go well with tea or coffee...!!

Ingredients:

  • 3 cups self -raising flour
  • 3 tbsp cocoa powder
  • 1 cup caster sugar
  • 1 cup soft margarine
  • 4 eggs beaten
  • 4 tbsp milk
  • 1/3 cup milk chocolate chips
  • icing sugar to dust if you need






Method:
  1. Place all of the ingredients except chocolate chips and icing sugar in a large mixing bowl and beat together until smooth.
  2. Beat in the milk and add chocolate chips.
  3. Spoon the mixture into the prepared tin and level on top.
  4. Bake in a preheated oven, 175C for 30-40 minutes until risen and springy to the touch.
  5. Leave to cool.
  6. Once cool, dust with icing sugar  if you want. cut into squares to serve.
Variation: For an attractive finish, cut thin strips of paper and lay in a crisscross pattern on top of the cake. Dust with icing sugar , then remove the paper strips.

Chocolate Ganache Cake .....

Ingredients:
  • 175 grams butter
  • 175 grams caster sugar
  • 4 eggs lightly beaten
  • 200 grams self-raising flour
  • 1 tbsp cocoa powder
  • 50 grams dark chocolate , melted




For Ganache:
  • 2 cups double cream
  • 375 grams dark chocolate , broken into pieces
Method:
  1. Beat the butter and sugar until light and fluffy.
  2. Gradually add the eggs, beating well after each addition.
  3. Sieve together the flour and cocoa.
  4. Fold into the cake mixture.
  5. Fold in the melted chocolate.
  6. Pour into the tin and bake in a preheated oven at 180C for 30 minute.
  7. Leave to cool for 5 minutes .
  8. Cut the cold cake into 2 layers.
To Make the Ganache:
  • Place the cream in a pan and bring to the boil, stirring.
  • Add the chocolate and stir until melted and combined.
Assembling:
  • Sandwich the cake together and spread over the top and sides of the cake.

Sugar Icing

The cake is a chocolate cake with buttercream icing.

For the icing:
  • Beat butter and shortening well.
    • 1/2 cup butter 
    • 1/2 cup shortening
  • Mix icing powder and water or milk.
    • 4 cups icing sugar (little by little)
    • 2 tbsp of water or milk.
  • Mix well until your required consistency.

Baked Alaska










1 basic recipe sponge cake, ( the recipe I used for the cake is linked)  baked in a 10 inches round tin.
1 litre vanilla ice cream
1 tin mixed fruit tin.
5 egg whites + 10 tbsp fine sugar



Make sponge cake and cool.

Cut horixontally  1/3 of the cake from top and keep aside.
Keep a steel plate upside down and cover it with foil and place the 2/3rd part of the cake on top.
Fill the center of the cake with fruits.
Cover the ice cream with the 1/3 of the cake.
Beat the egg whites till soft peaks form, then add 1 tbsp sugar at a time  and beat to a smooth, glossy meringue.
Spread the meringue on top of the cake.
Sprinkle fine sugar on top.
Preheat the oven to 220C and bake for 5 to 10 minutes until the meringue is light brown.

Chocolate cake 1

As I was browsing.... tumbled into Ria's this Chocolate Cake recipe which had a funny name...:)

So thought of trying it. The cake turned out perfect , very soft and moist...!! And the icing looked quite easy .... but I couldn't spread out the icing properly...:(

Its still worth sharing this recipe...!!!
Thanx Ria ..... my daughter enjoyed it .... she wants me to try in cupcakes....!!

Ingridents:
  • 2 tsp coffe powder
  • 2 tbsp cocoa powder
  • 1/2 cup water
  • 150 grams butter
  • 1 cup powdered sugar
  • 2 eggs
  • 1 1/3 cup flour
  • 3/4 tsp baking soda
  • 1/2 tsp vinegar
  • 1 tsp vanilla essence
  • salt to taste
For topping
  • 50 grams
  • 3 tbsp milk
  • 75 grams sugar
  • 2 tbsp cocoa
  • 200 grams icing sugar
  • 1/2 tsp vanilla essence

Method:
  1. Mix coffee powder in boiling water. And then add cocoa into it and mix
  2. Sieve the flour with baking soda and salt.
  3. Beat the butter.
  4. Add sugar into it and beat.
  5. Add eggs one at a time and beat.
  6. Add vinegar and vanilla essence.
  7. Add flour alternating with cocoa mixture.
  8. Add flour and coffe-cocoa. Mix well
  9. Pour in the preapared tin and bake for half and hour.


Method for Icing:
  • Mix cocoa and icing sugar in a bowl.
  • Melt butter , caster sugar amd milk together till sugar dissolved.
  • Once it is melted, bring to boil and pour over the cocoa-icing sugar
  • Stir well with a wooden spoon till well mixed and fluffy.
  • Stir till the mixture cools down a bit.
  • Pour over the cake and level it.

One Stage sponge Cake

Its weekend ..... for us n...... !!!

I had to bake a cake as the base of the dessert .... would love to share the recipe  of this cake which can be used as a base for most of the cake based dessert...!!!

This cake is called one stage sponge cake adapted from an old book from my mom's collection.


Ingredients:

  • melted butter for greasing
  • 1/2 cup jam for filling 
  • icing sugar for decoration
Method:

  1. Preheat the oven to 325F/170C,
  2. Grease  and flour two 7 inches sandwich tins or I used 1 large 10 inches tin since I need to use this cake as a base for Alaska pudding.
  3. Sieve the flour and baking powder into a bowl.
  4. Add the butter, sugar ,essence and eggs.
  5. Beat them together  until well mixed, glossy and light.
  6. Pour the mixture into the tins or tin and smooth the surface. 
  7. Place in a preheated oven for 45 minutes or until shrinks away slightly from the sides of the tin and springs back into shape when pressed lightly with a finger.
  8. Remove from the oven, cool in the tin for 2 minutes. Turn out on to a clean towel, then invert the cake on a wire rack to cool.
  9. When cold, sandwich  with jam , In case you r not using for any dessert as a base.

Marble Cake




The recipe is from the book of You Can Cook  a step by step cookbook for kids written by Annabel Karmel. Its a lovely book for kids. And I did a little  bit change in the recipe.


You will need :

  • 200 grams  unsalted butter, plus extra for greasing
  • 4 eggs, lightly beaten
I have always noticed from my childhood my grandma and then my ma used to always wash the eggs and dry them before using them.  Now, I do understand the importance of it.  She also used to break each egg in a bowl and then mix it with others.  This tip of hers is always useful since it will always help one the risk of shell bits  getting into the ingredients. 


  • 75 grams plain chocolate
  • 250 grams caster sugar
  • 200 grams self-raising flour
  • large pinch of salt
  • 1 tsp vanilla extract
  • 1 1/2 tbsp cocoa powder
For the chocolate icing:
  • 85 grams plain chocolate
  • 3 tbsp milk
  • 2 tbsp golden syrup


Method:



  1. Preheat the oven 180C/350F.  Lightly grease a Bundt tin or Cupcake mould tin.
  2. Melt the chocolate in a bowl set oven a pan of warm water. Then set it aside to cool.
  3. Cream the butter and sugar until light and fluffy.
  4. Beat in the eggs, a little at a time. If the mixture curdles (separate) add a spoonful of flour and carry on beating.
  5. Then sift over the flour and salt. Fold this in.
  6.  Divide the mixture equally between two bowls. Stir the vanilla into one of the bowls of mixture.
  7. Add the Cocoa powder and chocolate to the other bowl. Stir to combine.
  8. put alternating spoonfuls of chocolate and vanilla in the tin. You can do this in two layers, if you like.
  9. Use  a skewer or wooden spoon to swirl the mixtures into each other for a marble effect.  Bake for 50 minutes or until the cake is risen and firm to the touch.
  10. Cool in the tin for 20 minutes. Then turn out onto a cooling rack and leave to cool completely before icing.




 chocolate icing : 
Put the chocolate , milk and golden syrup into a heat proof bowl set over a pan of simmering water.  Leave to melt , stirring occasionally . Then cool the icing slightly and drizzle it over the cake.


The taste was excellent , I never thought it would turn out perfect. This is a perfect recipe if you looking for a marble cupcake recipe. And remember baking time for small cupcakes would be 30 minutes. Hope your kids would enjoy doing this, as much as my daughtie did....!!!
