Easy chocolate cup cake

Ingredients:

  • 2 1/4 cup flour
  • 2 cups granulated sugar
  • 1 cup unsweetened coco powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 canola oil
  • 2 tsp white vinegar
  • 1 cup coffe
  • 1 cup hot water


For Frosting( really wanted to frost the cupcake this time .... !!)

  • 1/4 cup shortening
  • 2 cups confectioners sugar
  • 1/4 tsp clear vanilla extract
  • 1-2 tsp water
Instructions:
  1. Preheat the oven 185C.
  2. In a large bowl, sift the dry ingredients together.  Set aside
  3. In a medium bowl, mix the vanilla extract, oil, vinegar, coffee and water.
  4. Slowly whisk the wet ingredients into the dry, be careful not to over mix.
  5. Scoop the batter into the cupcake pan.
  6. Bake for 20 minutes.
  7. Cool in the pans for 10 minutes.
Frosting:
  1. Cream shortening and vanilla in a bowl for 2-4 minutes.
  2. Add in powder sugar, one cup at a time.
  3. Use water for a creamy consistency, use less water for a stiff consistency.

Molten lava cake


Ingredients :

1/4 cup sugar
1/2 cup butter
2 large eggs
2 egg yolks
2 tbsp plain all purpose flour
1 tbsp icing sugar
pinch of salt
180 grams of chocolate chips
1 tsp vanilla essence

Method:

  1. Butter the ramekins very well to make sure the cakes don't stick in them during baking.
  2. Place over a double boiler and melt chocolate chips with butter in a heatproof bowl until smooth. (optional to add icing sugar)
  3. In another bowl add eggs, egg yolks, sugar, salt and vanilla essence. 
  4. Beat using beater until eggs turn light.
  5. Add the melted chocolate mixture gently, whisk together to combine.
  6. Sift the flour over the batter ,  mix until combine.
  7. Now divide the batter over the ramekins.
  8. Cover with cling film and refrigerate for at least one hour before baking. 
  9. When ready to bake, preheat the oven at 200C.
  10. Bake for 10 to 12 minutes.
  11. Once baked , cool them.
  12. Then run a knife around each cake to make sure it isn't stuck and carefully turn each one over a plate.
  13. Serve with ice-cream.

Classic Chocolate Cupcake

Ingredients:

125 gms sugar
125 gms soft butter
75 gms flour
50 gms cocoa powder
2 large eggs
1 tsp baking powder
1/2 tsp baking soda
a pinch of salt
5ml vanilla essence
30 ml milk

Method:

Place all the ingredients except milk in a bowl.
Beat it.
While you are beating keep adding milk.
Continue beating for a minute
Bake in a preheated oven @ 175 for 30-40 mts.
Remove from the oven.

Mocha Brownies

Ingredients:

  • 55 grams butter 
  • 115 grams plain chocolate
  • 175 grams brown sugar
  • 2 eggs
  • 1 tbsp instant coffee powder dissolved in 1 tbsp of hot water
  • 85 grams flour
  • 1/2 baking powder
  • 55 grams  chopped peanuts (optional)








Method:

Place butter and chocolate in a saucepan over low heat until melted.
Stir and set and aside to cool.

Place the sugar and eggs in a large bowl and cream together until light and fluffy.
Pour the chocolate mixture and the cooled coffee and mix.

Sift in the flour an baking powder and lightly fold into the mixture.

Pour the mixture into a tin.
Bake in a preheated oven @ 175 for 20-25 minutes.

Cool in the tin for few minutes.
Cool completely and when cold cut into squares.

Crab Coconut Masala

Ingredients:


  • 1 kg crab cut and cleaned
  • 1/2 cup coconut
  • 3 tbsp chilli paste ( Or chilli powder mixed in tamarind water)
  • salt to taste
  • 2 cloves garlic
  • 2 spring curry leaves
  • Oil for frying


Method:

Cook crab with chili paste, salt and coconut. 
Add 1/4 cup of water cover the pot and cook.

Heat oil in a deep pan. 
Add curry leaves along with crushed garlic and fry for a minute.
Add the cooked crab mix into it and fry for few minutes.

Red velvet cupcake




Ingredients:

  • 3 1/2 cups flour -Remove 7 tbsp of flour with cornflour
  • 3/4  cup  or 160 gms butter
  • 2 cups sugar
  • 3 eggs
  • 1 1/2 tsp baking soda
  • 3 tbsp cocoa
  • 3 tbsp red food colour+ 3 tbsp water
  • 1 tsp vanilla essence
  • 1 1/2 cup butter milk






Method:


  1. Sift the flour  mix with baking soda at lest 3 times and keep aside.
  2. In a large bowl beat butte and sugar until very light and fluffy.
  3. Add  one egg at a time, beating well after adding each one.
  4. In a bowl and cocoa , food colour, water and vanilla essence, whisk them well.
  5. Carefully add to the batter and continue beating on low speed.
  6. Mix buttermilk with salt.
  7. Add flour mix and buttermilk, beat until all the ingredients are mixed.
  8. Preheat the oven @175 for 10 minutes.
  9. Scoop the mixture into cupcake liners and bake until the toothpick comes out clean.

Another Chocolate Cake

Ingredients:



  • 1 3/4 cup flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 extra large eggs
  • 2 tsp vanilla essence
  • 1 cup of hot water



Method:
  1. Sift the flour, sugar, cocoa powder, baking powder, baking soda and salt into the bowl and mix until combined.
  2. In another bowl mix buttermilk, eggs and oil.
  3. With the mixer on low speed, slowly add the wet ingredients to the dry.
  4. With the mixer still on low and the water , stir to just to combine scraping the bottom of the bowl with a rubber spatula.
  5. Pour the batter into two 8 inch round cake tin.
  6. Bake @ 175C for 40-45 minutes, until a cake tester comes out clean.
  7. Cool in the pan for 30 minutes , then turn them out onto a cooling rack and cool completely.



Decorate with the icing.

Rick Bayless Rustic Chocolate Cake



Ingredients:

  • 100 grams butter
  • 100 grams chocolate (Dark , I used milk)
  • 3 eggs
  • 3/4 cup sugar
  • 1 tsp vanilla essence
  • 1/2 tsp salt
  • 1/2 cup flour
Method:

  1. In a pan, melt butter and chocolate stirring every few seconds until the mixture is smooth. 
  2. Allow to cool
  3. In a large bowl combine sugar and egg , beat at a high speed until mixture is fluffy.
  4. Beat in vanilla and salt.
  5. Stir in the chocolate mixture, then flour stir until batter is uniform.
  6. Preheat the oven @ 175C.
  7. Pour into the pan.
  8. Bake for 40-45 minutes.
  9. Slice once the cake is cool.
  10. Sprinkle icing sugar on top.

Carrot Thoran



Ingredients:

  • 2 carrot 
  • 1 small onion chopped
  • 2 green chillies chopped
  • 2 tbsp coconut
  • 1/2 tsp turmeric 
  • salt to taste
  • 4 curry leaves
  • Oil
  • Mustard a little
Method:

Mix all the ingredients except oil and mustard.
And keep aside.

Heat oil in pan.
Add mustard , once it starts to break.
Add the mixture and mix well.

Keep in a very slow flame & covered.
Once it get cooked, off the flame.

Chicken Masala Fry

Ingredients:

800 grams chicken cut into small pieces
2 tbsp ginger - garlic crushed
8 green chillies sliced
1 tbsp pepper
1 tbsp coriander powder
salt to taste
coriander leaves

Method
Add the above ingredients to the chicken and cook
Cook until all the water is absorbed.

Add oil ( 1- 2 tbsp) and fry the masala without the chicken.
Add the chicken and fry till all the masala mixes well with chicken.
Sprinkle the coriander leaves in the end.
