Dates and Banana Cake

  •  1 cup dates
  • 1/2 cup hot milk
    • Remove the seeds of the dates and cut into half.
    • Soak in hot milk for 30 minutes.
  • 2 bananas
    • Pour the dates mix into a blender.
    • Add the bananas and blend them together.
    • Pour in a deep bowl.

  • 1/4 cup oil
  • 1 cup wheat flour 
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla essence
    • Add oil, wheat flour, cocoa powder, baking powder, baking essence and 1/2 tsp vanilla essence into blended mix.

  • 1/2 cup milk
  • 1/4 cup chocolate chips 
    • Gradually add the milk into it and mix well.
    • Add the chocolate chip into it.
    • Pour into a loaf pan.
  • Bake in a preheated oven at 175C for 20 -30 minutes until a toothpick comes out clean.

Date Cake

Ingredients:
  • 20 Deseeded dates
  • 1 cup milk
  • 3/4 cup brown sugar
  • 1/2 cup + 1tbsp Oil
  • 1 1/2 cup flour or wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • a pinch of salt
  • 1/4 tsp cardamom powder
  • Optional 1/4 cup walnut or cashew chopped.

Method:

  1. Soak 20 dates without seeds in milk.
  2. Leave it aside for 4 hours.
  3. Grind the dates with milk after 4 hours .
  4. In a bowl add the brown sugar.
  5. Add the oil into it.
  6. Using a whisk beat well.
  7. Sieve the flour. To this add the flour and mix well.
  8. Add baking powder, baking soda and salt.
  9. Now combine using a whisk.
  10. Add the date paste gently and mix well.
  11. Optional to add walnut or cashew chopped .
  12. Pour the batter into the lined baking tray.
  13. Preheat the oven to 175°C for 10 minutes.
  14. Lets bake for 35 to 45 minutes.
  15. check with a toothpick if the cake is done.
  16. Slice it only after the cake is cooled.

Banana & Date muffins



For a change, I wanted to try some healthy muffins...!!!
This recipe is adapted from "muffins & bakes " book.

Ingredients

  • vegetable oil or cooking oil for spraying
  • 225 plain grams
  • 2 tsp baking powder
  • 1/2 tsp all spice
  • 5 tbsp caster sugar
  • 2 large egg white
  • 2 ripe bananas
  • 55 grams no-soak dired dates, pitted and chopped
  • 4 tbsp skimmed milk
  • 5 tbsp maple syrup
Method:
  1. Its important to spray with vegetable spray or cooking spray since there is no oil or butter used in the recipe.
  2. Sift the flour, baking powder, salt and all spice into a mixing bowl.
  3. Add the caster sugar and mix together.
  4. In a separate bowl, whisk the egg whites together. 
  5. Mash the sliced bananas in a separate bowl, then add them to the egg whites.
  6. Add the dates, then pour in the milk and maple syrup and stir together gently to mix.
  7. Add the banana and date mixture to the just combined.
  8. Do not overstir the mixture -it is fine for it to be a little lumpy.
  9. Divide the muffin mixture evenly between the cups in the muffin pan.
  10. Bake in a preheated oven 200C/400F for 25 minutes or until risen and golden.
  11. Remove the muffins from the oven and serve warm.
