Brown Sugar Pound Cakes

  • 1 stick butter (110gms)
  • 1 + 2 tbsp brown sugar
    • Whisk  the butter and brown sugar on medium speed,
    • Until pale and fluffy.
    • Add the eggs one by one.
    • Beating until it is well mixed.

  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1/4 cup buttermilk
    • Sieve flour and baking powder. 
    • Then add into the mixture alternating with buttermilk.
    • Beating until it is mixed well.

  • Preheat the oven at 175C for 10 minutes.

  • Scoop the batter using ice cream scoop. Pour into the lined cupcakes tray.

  • Bake until a toothpick comes out clean.

Moist Chocolate cupcakes

  •  1 cup flour
  • 1 cup sugar
  • 6 tbsp cocoa powder
  • 1 tsp salt
    • Powder the sugar for one minute.
    • Sieve the flour, coca powder and salt.
    • Add them to a large mixing bowl.
    • Mix them well and keep it aside.

  • 1 egg
  • 1/2 cup oil
  • 1/2 cup milk
  • 1 tsp vanilla essence
    • In a bowl mix the egg , oil, milk and vanilla essence.
    • Whisk together until well combined.
    • Pour the wet ingredients into the dry ingredients.
    • Mix well.

    • Add the water into it.  And mix well.

    • Preheat the oven for 175C for 10 minutes.

    • Prepare the cupcake pan with cupcake liners.

    • Fill the cupcake liners using ice cream scoop about half the liners.

    • Bake for 20 minutes or until a toothpick comes out clean.

    • Remove the cupcake from the oven.

Coffee Cupcakes



What you need:

  • 110 grams butter
  • 1 cup sugar
  • 2 eggs
  • 3 tbsp instant coffee
  • 2 tbsp hot water
  • 1 cup milk
  • 1 tsp vanilla essence
  • 2 cups flour
  • 1 tsp baking soda

Method:
  • Beat butter and sugar until well light and fluffy.
  • Then add two eggs into into it and beat well.
  • Mix the three tbsp coffee powder with two tbsp hot water into a paste and then dilute with milk.
  • Add vanilla essence.Add keep aside.
  • Add flour into the eggs mixture and keep beating light.
  • Slowly add the coffee mixture into it.
  • Beat until the batter is mixed properly.
  • Preheat the oven @175C for 10 minutes.
  • Scoop the batter into the muffin tray on cupcake liners.
  • Bake for 15-20 minutes or until a tooth pick comes out clean.
  • Allow it cool .
  • If you enjoy decorate with coffee butter cream.

I always wanted the coffee flavour to be strong in the cupcakes.  One of the bloggers suggested not to  add brown sugar as it could take over the flavour of coffee in  the cupcakes. Decided to take her advice. Another blogger advised  to add more of instant coffee.

The result is moist, delicious and the coffee flavour..!!

Brown Sugar cupcake

Ingredients:

  • 1 cup brown sugar
  • 110 gms melted butter
  • 1 cup milk
  • 1 egg
  • 1 tsp vanilla essence
  • 2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
Method:

  1. In a pan melt butter and stir into it brown sugar.
  2. once cooled
  3. Add milk, egg and vanilla essence and mix well.
  4. Then add the flour, baking soda and salt.
  5. Mix well.
  6. Optional one can add nuts of your choice (1/4 cup).
  7. Preheat the oven to 175C for 10 minutes.
  8. Scoop the batter into the muffin cups.
  9. Bake for 20  minutes or until a toothpick comes out clean.

Chocolate cupcake using cake wheat flour

Ingredients:

  • 1 1/3 cup cake wheat flour
  • 3/4 cup cocoa powder
  • 1 1/2 cup sugar
  • 1 tsp baking powder
  • 100 grams butter
  • 1/2 cup milk
  • 1 tsp vanilla essence
  • 2 eggs
Method:
  1. Sieve cake wheat flour, cocoa powder and baking powder.
  2. Cream the butter and sugar.
  3. Add one by one the egg.
  4. Then add vanilla essence.
  5. Add the dry ingredients alternating with milk..
  6. Mix well.
  7. Preheat the oven @ 175 C for 10 minutes.
  8. Scoop the mixture using ice cream scoop.
  9. Bake for 20-30 minutes until the tooth pick comes out clean. It also depends on oven to oven.

Blueberry muffins

Ingredients:

                 
  • 1 large egg lightly beaten
  • 1 cup plain yogurt
  • 1/3 cup oil
  • 1 tsp vanilla essence
  • 2 cups flour
  • 1/2 cup sugar
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup fresh blueberries
Method:

  1. In a large bowl whisk together the egg, yogurt, vanilla essence and oil.
  2. In another large bowl whisk the flour, sugar, baking powder, baking soda and salt.
  3. Gently stir in the blueberriers.
  4. With a rubber spatula fold the wet ingredients into the dry ingredients and mix well.
  5. Preheat the oven @ 175 for 10 minutes.
  6. Scoop the batter using ice cream scoop and fill 2/3 of the cupcake liner
  7. Bake for 20 minutes or until a toothpick comes out clean.

Red velvet cupcake




Ingredients:

  • 3 1/2 cups flour -Remove 7 tbsp of flour with cornflour
  • 3/4  cup  or 160 gms butter
  • 2 cups sugar
  • 3 eggs
  • 1 1/2 tsp baking soda
  • 3 tbsp cocoa
  • 3 tbsp red food colour+ 3 tbsp water
  • 1 tsp vanilla essence
  • 1 1/2 cup butter milk






Method:


  1. Sift the flour  mix with baking soda at lest 3 times and keep aside.
  2. In a large bowl beat butte and sugar until very light and fluffy.
  3. Add  one egg at a time, beating well after adding each one.
  4. In a bowl and cocoa , food colour, water and vanilla essence, whisk them well.
  5. Carefully add to the batter and continue beating on low speed.
  6. Mix buttermilk with salt.
  7. Add flour mix and buttermilk, beat until all the ingredients are mixed.
  8. Preheat the oven @175 for 10 minutes.
  9. Scoop the mixture into cupcake liners and bake until the toothpick comes out clean.

Cupcake with Tiramisu




Baked some eggless chocolate cupakes.  So tried this new London Dairy's Tiramisu ice-cream with cupcakes. Remember to warm a bit the cupcakes before having with ice-cream..!!
