Moist Chocolate cupcakes

  •  1 cup flour
  • 1 cup sugar
  • 6 tbsp cocoa powder
  • 1 tsp salt
    • Powder the sugar for one minute.
    • Sieve the flour, coca powder and salt.
    • Add them to a large mixing bowl.
    • Mix them well and keep it aside.

  • 1 egg
  • 1/2 cup oil
  • 1/2 cup milk
  • 1 tsp vanilla essence
    • In a bowl mix the egg , oil, milk and vanilla essence.
    • Whisk together until well combined.
    • Pour the wet ingredients into the dry ingredients.
    • Mix well.

    • Add the water into it.  And mix well.

    • Preheat the oven for 175C for 10 minutes.

    • Prepare the cupcake pan with cupcake liners.

    • Fill the cupcake liners using ice cream scoop about half the liners.

    • Bake for 20 minutes or until a toothpick comes out clean.

    • Remove the cupcake from the oven.

Double chocolate Muffins

 Ingredients:

  • 2 cups Flour 
  • 1 cup Sugar
  • 1/2 cup of Cocoa powder (since I had 1/4 cup of cocoa powder ,I used 4 tbsp of chocolate chips)
  • 1 tsp Baking Soda
  • 1 tsp salt
  • 1 cup Chocolate chips- Semi sweet
  • 2 Eggs
  • 1/2 cup +2 tbsp Curd (mix 1 tsp vinegar into it)
  • 1/2 cup Vegetable Oil
  • 1/2 cup Milk at room temperature
  • 1 and  1/2 tsp Vanilla essence

Method:
  1. Sieve flour, sugar, coco powder, baking soda .
  2. Mix chocolate chips and keep aside.
  3. Melt 4 tbsp chocolate chips.
  4. Add oil, milk, vanilla essence into melted chocolate chips.
  5. Add eggs and mix well.
  6. Add curd into it.
  7. Add the wet ingredients into the dry ingredients and mix with the a spatula.
  8. Preheat the oven @ 175°C for 10 minutes.
  9. Use ice cream scoop to pour the batter into the muffin tray.
  10. Bake for 20 minutes or until the tooth pick comes out clean.
Cool the muffins & Enjoy !!

Chocolate Cake Pops


This is something...I would say never happened to me while baking  forget to add sugar...:(



Ingredients:

  • 8 tbsp soft margarine
  • 100 grams caster sugar
  • 150 grams self-raising flour
  • 2 tbsp cocoa powder
  • 2 tbsp milk
Method:

  1. Put the margarine, sugar (the one I forget to add) , eggs, and cocoa in  a large bowl.
  2. Beat together until just smooth.
  3. Spoon the mixture into the muffin cases, filling three-quarters full.
  4. Bake the cupcakes in a preheated oven 180C/350F for 15 minutes.
I mixed those cupcakes and caster sugar. 




And then added the frosting cream into it.
Add frosting until the cake is rollable and holds together.
Roll a small amount of it into a ball, like a truffle. Place on a baking sheet. 
When the pops has been rolled , place them into the fridge for at least 1 hour.

For the coating all I had was icing sugar and some colours. So prepared the royal icing with 3 different colours.
After coating with the colours. Let it dry.

Coffee Cupcakes



What you need:

  • 110 grams butter
  • 1 cup sugar
  • 2 eggs
  • 3 tbsp instant coffee
  • 2 tbsp hot water
  • 1 cup milk
  • 1 tsp vanilla essence
  • 2 cups flour
  • 1 tsp baking soda

Method:
  • Beat butter and sugar until well light and fluffy.
  • Then add two eggs into into it and beat well.
  • Mix the three tbsp coffee powder with two tbsp hot water into a paste and then dilute with milk.
  • Add vanilla essence.Add keep aside.
  • Add flour into the eggs mixture and keep beating light.
  • Slowly add the coffee mixture into it.
  • Beat until the batter is mixed properly.
  • Preheat the oven @175C for 10 minutes.
  • Scoop the batter into the muffin tray on cupcake liners.
  • Bake for 15-20 minutes or until a tooth pick comes out clean.
  • Allow it cool .
  • If you enjoy decorate with coffee butter cream.

I always wanted the coffee flavour to be strong in the cupcakes.  One of the bloggers suggested not to  add brown sugar as it could take over the flavour of coffee in  the cupcakes. Decided to take her advice. Another blogger advised  to add more of instant coffee.

The result is moist, delicious and the coffee flavour..!!

Brown Sugar cupcake

Ingredients:

  • 1 cup brown sugar
  • 110 gms melted butter
  • 1 cup milk
  • 1 egg
  • 1 tsp vanilla essence
  • 2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
Method:

  1. In a pan melt butter and stir into it brown sugar.
  2. once cooled
  3. Add milk, egg and vanilla essence and mix well.
  4. Then add the flour, baking soda and salt.
  5. Mix well.
  6. Optional one can add nuts of your choice (1/4 cup).
  7. Preheat the oven to 175C for 10 minutes.
  8. Scoop the batter into the muffin cups.
  9. Bake for 20  minutes or until a toothpick comes out clean.

Sugar Sparkle Cupcakes



Recipe source: "The best ever book of cakes"


Ingredients:

  • 115grams self-raising flour
  • 115 caster sugar
  • 115 unsalted  butter softened
  • 2 eggs
  • 1 tbsp rose water
  • 1 tbsp water
  • pink food colouring 
Method:

  1. Preheat the oven to 190C. Line a 12 cup muffin tin with paper cases.
  2. Put the flour, sugar , butter and eggs in a large bowl with the rose water and beat until smooth.
  3. Add the milk and a few drops of pink colour(optional).
  4. Divide among the paper cases.
  5. Bake for 15- 20 minutes, or until the cakes are risen and golden, and are just firm to the touch.
  6. Remove them from the tray and put on a wire rack to cool.

  1. To make the topping, sift the icing sugar into  a bowl.
  2. Add the rose water with a few drops of pink colouring  and 5ml/ tsp of cold water or enough to  mix to a spreadable icing.
  3. Spoon  a little icing  over the top o the each cake, then top with sugar sprinkles , flowers or shapes.

Coffee Chocolate chip cupcakes





Ingredients:
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 1/2 cup unsalted butter, room temperature
  • 3/4  cup sugar 
  •  2 tbsp coffe powder
  • 1 tsp  vanilla extract
  • 1 egg
  • 1 cup milk ,room temperature
  • 3/4 cup dark chocolate chips
Method:
  1. Preheat oven to 180C. Line a 12 mold muffin tray.
  2. With a fork, whisk together the flour , baking powder and salt in a bowl.
  3. Beat the butter, vanilla sugar, coffe powder , vanilla extract and egg in a large mixing bowl.
  4. Add the flour mix and milk and blend on low speed until smooth, 30 seconds.
  5. Fold in the chocolate chips
  6. Spoon into muffin cases upto 2/3 full.
  7. Bake for 15-20 minutes, until springy to the touch.
  8. Cool in the tin for about a minute before putting onto a wire rack to cool completely.
  9. Top with ganche if desired.

I know of late been busy then lazy...... to update my blog. Sorry for that...:)

Marbled chocolate cupcakes

Marbled cupcake recipe is from  "muffins & bakes" book. 


Ingredients:

  • 175 grams soft margarine
  • 175 grams caster sugar
  • 3 eggs
  • 175 grams self- raising flour
  • 2 tbsp milk
  • 55 grams plain chocolate melted





Method:


  1. Put 21 paper baking cases in a muffin pan.
  2. Put the margarine, sugar, eggs, flour and milk in a large bowl and, using an electric hand whisk, beat together until until just smooth.
  3. Divide the mixture between 2 bowls.
  4. Add the melted chocolate to one bowl and stir together until well mixed.
  5. Using a teaspoon, and alternating the chocolate mixture with the plain mixture, put four half-teaspoons into each paper case.
  6. Bake the cupcakes in a preheated oven 180C for 20 minutes or until well risen and springy to the touch.
  7. Transfer to a wire rack to cool.

Chocolate Cupcake with ......White chocolate icing

"Both kids and and grown ups will love these sumptuous little cakes"

Ingredients:
  • 100 grams butter, softened
  • 100 grams caster sugar
  • 2 eggs lightly beaten
  • 50 grams chocolate chips
  • 2 tbsp milk( I used water)
  • 150 grams self - raising flour
  • 25 grams cocoa powder
Icing:
  • 225 grams white chocolate
  • 150 grams low-fat cheese
Method:

  1. Line an 18 muffin tray with paper cup cases.
  2. Sift together the flour and the coco powder, keep it aside.
  3. Beat together the butter and sugar until pale and fluffy.
  4. Gradually add the eggs beating well after each addition.
  5. Add the milk then fold in the chocolate chips.
  6. Add the flour and cocoa powder and fold into the mixture with a metal spoon or spatula.
  7. Divide the mixture equally between the paper cases.
  8. Bake in a preheated oven 180C for 20 minutes or until well risen.
  9. Leave to cool on a wire rack.
(I  did not make the icing since wanted to pack these cupcakes for my daughtie's snack time. Anyways here the recipe for icing..!)

To make the Icing :
  • Melt the chocolate and leave it cool slighty.
  • Beat the cream cheese until softened, then beat int he melted chocolate.
  • Spread  a little  of the icing over each cake and chill for 1 hour.
If  you r having the cupcake without the icing you need not chill.

vanilla cupcakes with fudge frosting

  •  2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt 
  • 1 cup sugar
  • 1/2 cup unsalted butter , room temperature
  • 2 eggs
  • 1/2 cup milk
  • 2 tsp vanilla extract
Fudge frosting
3 tbsp unsalted butter
1/2 cup granulated sugar
1/2 cup cocoa powder
1/2 heavy cream
1 tsp vanilla extract
salt

Method:


  1. Preheat the oven at 180C.
  2. Sift the dry ingredients together , if possible thrice.
  3. Cream the butter and sugar for 3 mints. 
  4. Add in the eggs one by one and beat it  after each one.
  5. Next add flour and milk alternately starting and ending with flour.
  6. Beat until the batter is light and fluffy.
  7. Scoop it into the cupcake liners  about 2/3 rd full.
  8. Bake for 20-25 minutes or till the top  is lightly golden brown and a toothpick inserted comes out clean.

For Frosting:

  • In a sacucepan , melt butter . 
  • Stir the sugar and cocoa gradullay stir tin the cream.
  • Heat over medium heat , until smooth and hot but not boiling.
  • Remove from heat and stir in vanilla and a pinch of salt.
  • Set aside to cool.
  • Dip the cupcake upside down in the frosting and and let the excess drip off.


Chocolate cupcakes .... .Magnolia Bakery

  • 1 cup  flour
  • 1/2 tsp baking soda
  • 1/2 cup softened butter
  • 1/2 sugar
  • 1/2 cup brown sugar
  • 2 eggs at room temperature
  • 3 oz melted chocolate (i.e 90 grams)
  • 1/2 cup buttermilk
  • 1/2 tsp vanilla essence
Method:
  1. To melt the chocolate, place in a double boiler over simmering water on low heat.
  2. Remove from heat and let it cool.
  3. Sift the flour and baking soda, set aside.
  4. In a bowl cream the butter using electric beater.
  5. Add the sugar and beat for 3 minutes until fluffy.
  6. Add the eggs one at a time, beat well after each addition.
  7. Add the chocolate, mix well.
  8. Add the dry ingredients alternating with buttermilk and vanilla essence.
  9. Scrape down the batter from the side using a rubber spatula.
  10. Scoop the batter into the cupcake lines. 
  11. Bake at 175C for 20 minutes.
  12. Cool in tin for 10 minutes.

Chocolate cupcakes .... ..joy of baking

  • 1/2 cup cocoa
  • 1 cup boiling water
  • 1 1/3 cup flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 cup 113 grams unsalted butter
  • 2 large eggs
  • 2 tsp vanilla extract



Method:
  1. Preheat the oven.
  2. In a small bowl stir until smooth the boiling water and cocoa powder.
  3. Let it cool.
  4. Then in another bowl whisk flour,  baking powder and salt.
  5. Cream butter and sugar until light and fluffy.
  6. Add eggs one at a time.
  7. Add the flour mixture and mix well. 
  8. Then the cooled cocoa and stir until smooth.
  9. Fill the cupcake liners  and bake for 20 minutes at 175C.

Chocolate cupcakes .... ..Alice Medrich

Ingredients:
  • 1 cup all purpose flour
  • 1 cup sugar +2 tbsps
  • 1/3 cup  cocoa powder
  • 1/2 tsp baking soda 
  • 1/4 tsp salt (I did not use salt since the butter was salted)
  • 1 /2 cup butter melted and warm ( I used salted)
  • 2 large eggs
  • 1 tsp  vanilla extract
  • 1/2 cup hot water


Method:


  1. In a large mixing bowl, mix the flour , cocoa powder , sugar , baking soda and salt together.
  2. Add the butter , eggs and vanilla and beat on medium speed for one minute.
  3. Add 1/2 of the water and beat for few seconds.
  4. Scrape the sides  of the bowl and then add the remaining water.
  5. Beat for until the batter is smooth.
  6. Preheat the oven 175C. 
  7. Then pour the batter into the cupcake liners.
  8. Bake for 20 minutes or until the toothpick comes out clean. 
  9. Store and serve at room temperature.

Eggless Chocolate cupcakes





Ingredients:

  • 1 1/2 cup flour
  • 1 cup sugar 
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/3 cup cocoa 
  • 1/2 cup oil
  • 1 cup water
  • 1 tbsp vinegar
  • 1 tsp vanilla essence
Method:

  1. Combine all ingredinets until moist and well blended.
  2. Preheat the oven to 175C/370F.
  3. Use ice-cream scoop to pour the batter into the cupcake liners. (fill  only 3/4)
  4. Bake for 20- 25 minutes.

Devil's Food Cupcake


During my college days,  the only cooking class I attended ....was Aunty Vimala's . The only reason I attended was my mom wanted me to learn cooking...:) 
I used to admire the way she used to  prepare and never thought I will be able too. This recipe was originally baked as a cake ,I wanted to try in cupcakes. Devil Food cake is  from her collection....!!



Ingredients:

  • 1/2 cup butter
  • 1 2/3 cup white flour
  • 1 cup milk
  • 11/2 cup sugar
  • 1/2 cup cocoa
  • 3 eggs
  • 1 1/4 tsp soda -bicarbonate
Method:
  1. Sieve  together flour, cocoa, soda-bi carbonate
  2. Beat the butter, add sugar.
  3. Drop in the eggs one at a time and beat.
  4. Add milk and flour .
  5. Bake it preheated oven for 20 minutes.

Banana & Date muffins



For a change, I wanted to try some healthy muffins...!!!
This recipe is adapted from "muffins & bakes " book.

Ingredients

  • vegetable oil or cooking oil for spraying
  • 225 plain grams
  • 2 tsp baking powder
  • 1/2 tsp all spice
  • 5 tbsp caster sugar
  • 2 large egg white
  • 2 ripe bananas
  • 55 grams no-soak dired dates, pitted and chopped
  • 4 tbsp skimmed milk
  • 5 tbsp maple syrup
Method:
  1. Its important to spray with vegetable spray or cooking spray since there is no oil or butter used in the recipe.
  2. Sift the flour, baking powder, salt and all spice into a mixing bowl.
  3. Add the caster sugar and mix together.
  4. In a separate bowl, whisk the egg whites together. 
  5. Mash the sliced bananas in a separate bowl, then add them to the egg whites.
  6. Add the dates, then pour in the milk and maple syrup and stir together gently to mix.
  7. Add the banana and date mixture to the just combined.
  8. Do not overstir the mixture -it is fine for it to be a little lumpy.
  9. Divide the muffin mixture evenly between the cups in the muffin pan.
  10. Bake in a preheated oven 200C/400F for 25 minutes or until risen and golden.
  11. Remove the muffins from the oven and serve warm.

Nutella Cupcakes


    Did you know ?? That Feb 5th was considered as  nutella day. This recipe is for ..... nutella lovers  .... nutella cupcake....:)


Ingredients:
  • 110 grams flour
  • 100 grams butter
  • 3 eggs
  • 110 grams sugar
  • 2 tbsp Nutella
  • 1 tsp vanilla essence
Method: 
  1. Put the softened butter and sugar in a bowl and beat together until light and fluffy.
  2. Gradually beat in the eggs (lightly beaten eggs).
  3. Add the nutella and vanilla essence and beat.
  4. Sift the flour and then using a metal spoon , fold then into the mixture.
  5. Preheat the oven at 175C/350F.
  6. Bake the cupcakes for 10-15 minutes or until well risen and firm to touch.

valentine heart cupcake



These cupcakes are dedicated to all those who believe in Valentine's day.......!!!


This recipe ... it was adapted from my favourite book muffins & bakes. 



Ingredients:
  • 6 tbsp  butter, softened , or soft margarine
  • 85 grams caster sugar
  • 1/2 tsp vanilla essence
  • 85 grams caster sugar
  • 1/2 tsp vanilla essence
  • 2 eggs lightly beaten
  • 70 grams plain flour
  • 1 tbsp cocoa powder
  • 1 tsp baking powder
For topping:

  • 4 tbsp butter, softened
  • 115 grams icing sugar
  • 25 grams plain chocolate melted
  • Sprinkles flower decorations
Method:
  1. Put the butter, sugar and vanilla essence in a bowl and beat together until light and fluffy.
  2. Gradually add the eggs, beating well after each addition.
  3. Sift in the flour, cocoa and baking powder.
  4. Using a metal spoon , fold into the mixture.
  5. Spoon the mixture into paper cases.
  6. Bake the cupcakes  in a preheated oven, 180C/350F, for 20-25 minutes. or until well risen.

To make the topping:
  1. Put the butter in a large bowl and beat until fluffy.
  2. Stir in the icing sugar and beat together until smooth.
  3. Add the melted chocolate ( here I used hersely's chocolate sauce instead of chocolate ..... was lazy to melt the chocolate) and beat togther until well mixed.
  4. When the cakes are cold, pipe the icing on top of the cake.
  5. Decorate with the sprinkle....!!

Browinies Cupcakes

Its been a  while.. that I baked brownies.... !!! 

This recipe, brownies in cupcakes.... found it quiet easy ..... don't remember from where but it was written in my recipe collection book...:)

And did my usual bit of changes... like cashew nuts instead of almonds ..... the amount of cocoa I reduced ..... !!!


We enjoyed it.... !!!

Ingredients:
  • 200 grams of butter
  • 1/2 cup of cocoa ( i used only 3/4 qty of cocoa and rest with flour)
  • 3 large eggs
  • 1 heaped cup of sugar
  • 1 tsp vanilla essence
  • 1/2 cup flour
  • 1 pinch of salt
  • 1 cup of chopped cashew nuts
Method :
  1. Cut the butter into pieces.
  2. Place the butter into large pan. And heat it.
  3. Once melt turn off the heat.
  4. Add sugar and mix well.
  5. Add cocoa when it is warm and let it blend.
  6. Let it cool.
  7. Beat the eggs lightly and add into it.
  8. Add vanilla essence.
  9. Mix in flour and cashew nuts.
  10. Preheat the oven to 175C.
  11. Pour into cupcakes liners.
  12. Bake for 20 minutes.  When a toothpick inserted comes out clean the it is done.
  13. Remove the cupcakes brownies and cool.

chocolate Butterfly cakes

  Sometimes wonder why I end up making chocolate cake... .. was enjoying the morning coffee and my daughter her glass of milk ... but was missing  .....chocolate cupcake. So here ended up making chocolate butterfly cake... 

Ingredients:

  • 8 tbsp butter softened
  • 100 grams castor sugar
  • 150 grams  self-raising flour
  • 2 large eggs
  • 2 tbsp cocoa powder
  • 25 grams plain chocolate melted
  • icing sugar, for dusting
Filling:
  • 6 tbsp butter softened
  • 175 grams icing sugar
  • 25 grams plain chocolate melted
Method:

  1. Put the baking cases in a muffin pan.
  2. Put the margarine, sugar flour, eggs and cocoa in a large bowl and , using an electric hand whisk, beat together until smooth. 
  3. Beat in the melted chocolate.
  4. Spoon the mixture into the paper cases, filling 3/4 full.
  5. Bake the cupcakes in a preheated oven, 180C/350F, for 15 minutes or until springy to the touch.
My daugtie started eating it when it was warm ..... we just enjoyed cupcakes ...didn't bother the complete the filling.
So here's the recipe for the filling....
  1. Put the butter in a bowl and beat until fluffy.
  2. Sift in the icing sugar and beat together until smooth. 
  3. Add the melted chocolate  and beat until  well mixed.
  4. When the cupcakes are cold, use a knife to cut a circle from top of each cupcake and then each circle in half.
  5. Spread or pipe a little of the buttercream into the center halves into it at an angle to resemble butterfly wings
  6. Dust  with a little sifted icing sugar before serving.

Hope u will be able to wait to complete the filling and not jump into it  like us...!!!
