- 3 1/2 tbsp soft margarine
- 115 g brown sugar
- 2 large eggs
- Put the margarine, sugar and eggs in a large bowl.
- Beat together until just smooth.
- 115 g flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 25 g cocoa powder
- Sieve the flour, baking soda, baking powder and cocoa powder into the bowl.
- And mix well until its smooth.
- 125 ml butter milk or sour cream
- Fold in the sour cream or buttermilk.
- Do not over mix or beat.
- Preheat the oven at 175C for 10 minutes.
- Using a ice cream scoop , scoop the mixture into the cupcake liners.
- Bake for 20 minutes or until the tooth pick comes out clean.
