Vatalappam



 

Vatalappam is a coconut based pudding with jaggery, cashew, eggs and coconut milk. Its a popular Sri-lankan pudding.

Ingredients:

  • 6 eggs
  • 1/4 cup water
  • 3/4 cup thick milk
  • 2 Palm jaggery
  • few cashew and raisins for decoration
  • 1tsp ghee

Step by Step
  1. Break and melt the palm jaggery with 1/4 cup water.
  2. Beat the eggs well until pale and light.
  3. Add the palm jaggery into the eggs by using a strainer.
  4. Add the thick milk.
  5. Mix well until all blends well.
  6. Sprinkle cashew and raisins  along with a tsp of ghee before pouring the mixture into the bowl.
  7. Steam for 25 minutes.
  8. Let it cool well before turning into a plate.
  9. One can serve it warm or cool.

Dry Fruits Cream.....



  • 25 black grapes
  • 25 kismis
  • 25 Almonds
  • 25 Cashew
  • 10 Dates
  • 10 Fig
  • 25 grams Pista without salt
    • Cut all the dry fruits into small pieces.
  • 2 Fresh Cream
  • 1 tin milkmaid
    • 1/4 tin of milkmaid and 2 fresh cream  with the dry fruits.
    • Keep aside.
  •  1 glass Milk
  • 1 fresh cream
    •  Boil Milk.
    • The add 1 fresh cream and milkmaid and mix well.
  • 2 tsp gelatin
  • 1/4  glass hot water
    • Add 2 tsp of gelatin in 1/4 glass of hot water.
    • Mix well.
    • In a mixer beat the milk mixture and the gelatin well.
    • Pour in a tray or short glasses and keep in the fridge to set.
    •  Once it is set cover it up with the dry fruits mixture.

If you need you can decorate it with cornflakes or strawberry.

Caramel Pudding....

I could say one of the first puddings  I tasted or remembers or the one which I tried is "Condensed milk pudding " this is what I  call it ....:) Each one of us have different ways of making it. The best part is the tin of nestle condensed milk  still remains the same shape , may be even the design ...only that  changes are the photos's  .....as for the taste it still is one of best pudding....!!

Ingredients
 1 tin Milk
1 tin condensed Milk
4 eggs
2 tbsp sugar + 3 tbsp for  caramelizing

Method :

Mix condensed milk tin ,milk, eggs and 2 tbsp sugar .
Beat with a hand beater for 5 minutes.
Caramelize the sugar till golden brown ,in a deep round pan.
Pour the mixture into the pan. ( or small moulds )
Steam in a steamer until it is cooked or when a knife come out clean.
Let it cool.
Invert onto a serving platter.




One can serve warm or chilled. I would prefer chilled...!!

Baked Custard n Cake

(Recipe source: From one of my aunt's  sis)



For the Cake Mix:
  • 2 Eggs
  • 1 cup flour
  • 1 cup powdered sugar
  • 1/4 cup cocoa powder
  • 2 tsp baking powder
  • 1/2 cup water
  • 100 ml oil
  • 2 tsp vanilla essence

For the Custard Mix
  • 1 tin Condensed Milk maid 
  • 2 eggs
  • 1 tin water 
  • 1 tbsp sugar

Custard Mix

Beat the eggs with the condensed milk , sugar and water.
Keep it aside.

Cake Mix

Sieve all the dry ingredient.
Put then in a deep bowl.
Make a hole in the center and the egg yolk , water , oil and vanilla essence.
Then beat them well.
Beat the egg whites and it into the mix.
Mix well.

Method

Pour the custard mix into a dish.
Pour the cake mix into the same dish.
Place the dish on baking tray with water in it.
Bake in a preheated oven 175C for 1 hour.


Once done serve with chocolate sauce.

Mango......Glass Pudding




Sarah has a lovely blog www.spoonfulofdelight.blogspot.com who is hosting this month the kerala kitchen contest.  I am sending this to her.

  • 4 ripe mangoes
  • 10 grams plain china grass( also know as Agar Agar or Japanese Moss )
  • 4 tbsp sugar
  • 1000 ml water
  • condensed milk
  • 1/2 cup of cashew pralines

  1. Soak the china grass in the water for 4 minutes.
  2. Add sugar and boil until all of them is mixed.
  3. Cut the mangoes into small pieces.
  4. Spread the mangoes into a dish.
  5. Pour the boiled china grass into it.
  6. When cool refrigerate until set.
  7. Serve with milkmaid and pralines on top.

Lychee with Pomegranates







2 can lychee's in syrup
2 cup heavy cream
2 cup milk
4 tbsp sugar
2 tsp powdered gelatin





Place 3 tbsp of cold water in a small bowl and sprinkle the gelatin over the top.
Let it set while you do the next step.

Combine milk, cream and sugar in a medium saucepan.
Heat on medium stirring until the sugar is dissolved and it just comes to boil.
Add the lychee's can to the mixture and crush the lychee's with whipper.
Add gelatin and stir until it is mixed.
Pour into a dish.
Sprinkle pomegranates on top.
Refrigerate until set.

Cupcake with Tiramisu




Baked some eggless chocolate cupakes.  So tried this new London Dairy's Tiramisu ice-cream with cupcakes. Remember to warm a bit the cupcakes before having with ice-cream..!!

Strawberry Cream

I always love to make desserts which are quick and easy.. ...so decided to try something new on strawberry..!!

10 strawberry
1 tin nestle cream
2 cup of ice - cream

Clean the strawberry with water and drain the water from it.
In a bowl whip the strawberrry , nestle cream and ice- cream until it is mixed properly.
Put the mix into a bowl and decorate it with chocolate sauce.




Note: One can also add thin slices of bannan.

Baked Alaska










1 basic recipe sponge cake, ( the recipe I used for the cake is linked)  baked in a 10 inches round tin.
1 litre vanilla ice cream
1 tin mixed fruit tin.
5 egg whites + 10 tbsp fine sugar



Make sponge cake and cool.

Cut horixontally  1/3 of the cake from top and keep aside.
Keep a steel plate upside down and cover it with foil and place the 2/3rd part of the cake on top.
Fill the center of the cake with fruits.
Cover the ice cream with the 1/3 of the cake.
Beat the egg whites till soft peaks form, then add 1 tbsp sugar at a time  and beat to a smooth, glossy meringue.
Spread the meringue on top of the cake.
Sprinkle fine sugar on top.
Preheat the oven to 220C and bake for 5 to 10 minutes until the meringue is light brown.
