Chocolate Almond Cake



Ingredients:

  • 175 grams chocolate chip
  • 175 grams butter
  • 125 grams sugar
  • 4 eggs separated
  • 1 tsp baking powder
  • 50 grams flour
  • 125 grams almond powder( powder the almonds)
  • 1 tsp almond essence

Toping:
  • 4 tbsp icing sugar
  • 2 tbsp butter
  • 1 tsp of cocoa powder
  • 3 tbsp of water

Method:

  1. Melt the butter with chocolate chips in a small pan. 
  2. Beat 100 grams of sugar with egg yolks and whisk until pale and creamy.
  3. Add the melted chocolate mixture, beating until well combined.
  4. Sieve the flour and almond powder with baking powder.
  5. Fold into the chocolate mixture .
  6. Whisk the egg whites in a bowl with the remaining sugar until standing into soft peaks.
  7. Fold the egg whites into the chocolate mixture and spoon into the tin.
  8. Bake in a preheated oven ,175C for 40 minutes. Let it cool.
Toping:

  1. Melt the butter with the cocoa powder.
  2. Mix in the icing sugar with water into it.
  3. Mix well.
  4. Spread the topping over the cake , only if it the cake is cool.
  5. If needed scatter with the almonds flaks with melted chocolate.
  6. Leave for 2 hours before serving.

Almond cake


Ingredients:


  • 5 eggs separated
  • 200g sugar
  • 1 tbsp flour ( or cornflour)
  • 225 gms almond powdered
  • 1 tsp almond extract
  • 1 tsp baking powder

Method:



  1. Beat yolks with sugar until light and fluffy.
  2. Drizzle the almond extract while the yolks are mixing
  3. Add flour , continue beating.
  4. Add baking powder and a pinch of salt while beating.
  5. Add the almond meal and continue mixing.
  6. When the batter gets firmer.
  7. Add the egg white which is beaten well , spoon by spoon.
  8. Preheat the oven @ 175 C for 10 minutes.
  9. Pour the mixture into a 9inch tin.
  10. Bake for 1 hour or until when a toothpick comes out clean.

Coffe-chips Brownie......what ever u want to name it


I wanted to bake brownie which is not a heavy chocolate and has a tint of coffee taste...  So tried my new combination....!!!

                                                            
                                                               Ingredients:

  • 100 grams butter
  • 100 grams self-raising flour
  • 100 grams almonds and cashewnuts ground
  • 100 grams sugar
  • 50 grams chocolate chips
  • 3 eggs.
  • 1 tsp coffee









Method : 

  1. Melt butter , add sugar and chips and stir in the pan over a flame .
  2. Remove from the flame.(do not keep it too long in the flame)
  3. Add coffee powder and mix.
  4. Once cool, add the eggs and beat it well.
  5.  Finally add the flour, powdered almonds and cashew and mix it until just moistened.
  6. Preheat the oven at 180C.
  7. Bake for 30 minutes or until toothpick inserted comes out clean.
