Healthy Chocolate Cake

 

This chocolate cake does not contain any flour or sugar, butter or oil. It takes just 30 minutes to make and bake.

  • 98 gms pitted  dates
    • Soak in warm water for 15 minutes.
    • Add dates to a food processor blend until a smooth paste is forms.The date should pull away from the sides.

  • 2 tbsp cocoa powder
    • Add to the dates the cocoa powder and mix well.

  • 1 pinch of baking powder
  • 1 egg
    • Add in baking powder and egg mix until smooth.

    • We have to scrape the sides and mix well until the dates are blended.

    • Preheat the oven at 175C for 10 minutes.
    • Pour the batter into a prepared tin.
    • Bake for 30 minutes or until a toothpick  inserted comes out clean.
    • Let the cake cool completely before serving.

Chocolate cake with chocolate sauce

 This has been my favorite cake recently. Its super moist and light texture. Served with a hot chocolate sauce will definitely give a competition to Matilda Cake !!!

Ingredients:

For the Cake:

  • 1 3/4 cup  flour
  • 3/4 cup cocoa powder
  • 1 3/4 cup granulated sugar
  • 2 tsp baking soda
  • 1 tsp  baking powder
  • 1 tsp salt
  • 1/2 cup vegetable oil or coconut oil
  • 2 eggs
  • 2 tsp vanilla essence
  • 1 cup buttermilk
  • 1 cup hot coffee
For the Sauce:
  • 1 cup chocolate chips
  • 1 cup whipping cream

Method:

  1. Whisk the flour, cocoa powder , baking powder, baking soda and salt together in a large bowl
  2. Mix the oil, eggs, vanilla essence  using a hand held mixer.
  3. Add the buttermilk and mix well.
  4. Pour the wet ingredients into the dry ingredients.
  5. Add the hot coffee into and mix on a low speed.
  6. Until the batter is thin.
  7. Preheat the oven to 175C.
  8. Divide the batter into two pans. 
  9. Bake for 30 minutes until a tooth pick comes out clean.
  10. Remove the cake from the oven and let it cool
Make the Sauce:
  1. Place the chocolate chips on a bowl.
  2. Heat cream on a stovetop until just simmering.
  3. Pour the cream over the chocolate chips
  4. Let it sit for few minutes.
  5. Stir well until smooth.
Assemble the Cake:
  • Place one layer of cake over a cake stand.
  • And then spread one tbsp of the sauce over it .
  • Top with the second layer of cake over and repeat  with one tbsp of sauce over it.
  • Keep the remaining sauce in the refrigerator. 
At the time of Serving:
  • Warm the remaining sauce  just before serving  and pour over each slice at that time depending one needs.

Chocolate cake Donuts

Ingredients:
  •  1 1/2 cup flour
  • 1 cup light brown sugar
  • 1/2 cup castor sugar
  • 2/3 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup chocolate chips
  • 2 large eggs
  • 3/4 cup milk
  • 2 tsp vanilla extract
  • 2 tsp vinegar
  • 110 gms / 1 /2 cup butter

Method: 

  1. In a large mix flour, sugars, cocoa powder, baking powder and baking soda.
  2. Set aside.
  3. In a pan melt the butter and chocolate chips with milk and then cool.
  4. Add the eggs and vanilla extract and beat well.
  5. Add the vinegar and mix well.
  6. Pour the liquid mix into the dry ingredients and mix until its combined.
  7. Preheat the oven to 175C for 10 minutes.
  8. Scoop the batter into the pans. 
  9. Bake for 15 minutes or until the tooth pick comes out clean.
  10. Let it cool for 30 sec and the invert the pan onto a cooling rack.

All in one chocolate cake


Perfect cake with a tea in the evening.

Ingredients:

  • 1 cup flour

  • 1 1/2 tsp  baking powder
  • 1/4  salt
  • 1 cup castor sugar
  • 3 tbsp cocoa powder
  • 3 tbsp or 47 gms butter 
  • 1/3 milk
  • 2 eggs

Step by Step
  1. Place all the ingredients in one bowl.
  2. And mix until smooth and pale.
  3. Pour in a lined pan.
  4. Preheat the oven at 175C for 10 minutes and then bake it for 20 mts or until the toothpick comes out clean.

Chocolate Almond Cake



Ingredients:

  • 175 grams chocolate chip
  • 175 grams butter
  • 125 grams sugar
  • 4 eggs separated
  • 1 tsp baking powder
  • 50 grams flour
  • 125 grams almond powder( powder the almonds)
  • 1 tsp almond essence

Toping:
  • 4 tbsp icing sugar
  • 2 tbsp butter
  • 1 tsp of cocoa powder
  • 3 tbsp of water
-------------------------------------------------------------------------------------------------------------------------------

Method:

  1. Melt the butter with chocolate chips in a small pan. 
  2. Beat 100 grams of sugar with egg yolks and whisk until pale and creamy.
  3. Add the melted chocolate mixture, beating until well combined.
  4. Sieve the flour and almond powder with baking powder.
  5. Fold into the chocolate mixture .
  6. Whisk the egg whites in a bowl with the remaining sugar until standing into soft peaks.
  7. Fold the egg whites into the chocolate mixture and spoon into the tin.
  8. Bake in a preheated oven ,175C for 40 minutes. Let it cool.
Toping:

  1. Melt the butter with the cocoa powder.
  2. Mix in the icing sugar with water into it.
  3. Mix well.
  4. Spread the topping over the cake , only if it the cake is cool.
  5. If needed scatter with the almonds flaks with melted chocolate.
  6. Leave for 2 hours before serving.

2 Ingredient Chocolate Cake


Ingredients:
  • 4 eggs
  • 225 grams  milk or semi sweet  chocolate chip
  • any icing or powder icing sugar to decorate

Method:
  1. Melt the chocolate chip in low flame. Keep aside.
  2. separate the egg yolk and white in two bowls.
  3. Add the egg yolk one by one whisking to combine.
  4. Beat the egg white until soft peaks form.
  5. Using a spatula gently fold in little by little the egg white into the chocolate mixture.
  6. Preheat the oven to 175C for 10 minutes.
  7. Pour the mixture into a greased pan.
  8. Bake for 25 minutes or until a toothpick comes out clean.
  9. Serve with ice cream.

Chocolate Buttermilk Pound cake

Ingredients:

  • 1 cup plain flour
  • 1/4 cup wheat flour
  • 1/2 tsp baking powder
  • 1/4 heaped cup cocoa powder
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup unsalted butter, room temperature 
  • 1cup sugar
  • 2 eggs 
  • 100 ml buttermilk
  • 1 tsp pure vanilla extract
To make butter milk substitute at home
  • Take 100 ml milk at room temp , add 1 tsp white vinegar. Let it stand for 5-10 minutes. When it curdles its ready.

Method:
  •  Sift the flour with the coca, baking powder , baking soda and salt. Reserve.
  • Cream the butter and sugar. 
  • Beat in eggs one at a time.
  • Followed by the vanilla extract.
  • With beater on low add the flour and buttermilk alternately.
  • In case you need to add nuts add them at this point.
  • Preheat the oven @175C for 10 minutes.
  • Bake for 30-40 minutes till golden brown on top or until a tooth pick comes out clean.
Ganche :
  • 3 tbsp low fat cream
  • 100 gms dark chocolate
            • Gently simmer the two over low heat, stirring constantly until the chocolate melts. Take off heat.

Chocolate Cake without eggs

Ingredients:
  • 1 1/2 cup flour
  • 1 cup sugar
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 75 grams butter
  • 1 tbsp lime juice 
  • 1 tsp vanilla essence
  • 1 cup warm water
                For Frosting:
      • 2 tbsp butter
      • 1/4 cup milk
      • 100 grams chocolate chips


Method:

  1. In a bowl stir together flour, sugar, cocoa powder, baking powder, baking soda and salt.
  2. Add melted butter into it.
  3. Then add lime juice, vanilla essence and water.
  4. With a fork mix all the ingredients until well blended.
  5. Preheat the oven @175 for 10 minutes.
  6. Pour the mixture in a 8inch pan.
  7. Bake for 30 minutes or until the fork comes out clean.
      • Heat butter and milk until butter melts.
      • Pour over the chocolate chips
      • Let it stand for few minutes and then mix well
      • Pour over the cooled cake

Chocolate carving Cake




Ingredients:
  • Cake
    •  1 cup flour
    • 1 cup sugar
    • 1/2 cup cocoa powder
    • 3/4 tsp baking powder
    • 3/4 tsp baking soda
    • 1/2 tsp salt
    • 1 large egg
    • 1/2 cup milk
    • 1/4 cup vegetable oil
    • 1/2 cup boiling water or coffee
    • 2 tsp vanilla essence
  • Frosting
    • 1 1/2 cup chocolate chips
    • 1 cup double cream
    • 1 tbsp butter

Method:

    1. Mix flour, cocoa , baking powder. baking soda and salt in a bowl.
    2. Add in egg, milk, vegetable oil and vanilla essence.
    3. Mix in a low speed until all well mixed.
    4. Then increase the speed for 2 minutes.
    5. Then add boiling water  and gently mix well.
    6. Preheat the oven @175 for 10 minutes.
    7. Pour the batter into a pan. 
    8. Bake it for 30- 35 minutes until a toothpick comes out clean.
    9. Cool the cake.
Frosting.:
    1. Put the chocolate chips in a deep bowl.
    2. Bring it to just boil the cream and butter.
    3. Pour oven the chocolate chips.
    4. Leave it for a minute.
    5. Then mix well until it all melts.
    6. Spread over the cake.

The Best Chocolate cake

I know this name sounds..... oh no yet another another Best Chocolate Cake.  Try it out and let me know.
Adapted from add a pinch. But did a little tweaks..... as usual.

Also couldn't wait for the butter cream icing but did a nutella cream icing. Sorry for the half cake photograph , now you can imagine how tasty it was.

I also agree with add a pinch author  that if you are a chocolate lover than make this cake.

Ingredients:

  • 2 cups flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp coffe powder
  • 1 cup milk
  • 1/2 cup soft butter
  • 2 eggs
  • 1 tsp vanilla essence
  • 1/2 cup boiling water

Method:

  1. Sieve flour, cocoa powder, baking powder, baking soda, salt and coffee powder in a deep bowl.
  2. Add sugar to it.
  3. Stir the flour mixture until well combined.
  4. Add milk, vanilla essence, eggs and butter.
  5. Mix all of the at medium speed.
  6. Reduce the speed and add boiling water.
  7. Beat at a high speed for a about 1 minute.
  8. Pour the mixture in two pans.
  9. Preheat the oven for 10 minutes @ 175C.
  10. Bake the cake for 30 minutes until a toothpick comes out clean.
  11. Remove from the oven and cool.

Nutella Cream

  • 8 tbsp nutella
  • 500 gm whipped cream
  • Mix well.

Gooey Cake



Ingredients:

  • 200 g unsalted butter
  • 200 g semi-sweet chocolate chips
  • 5 large eggs
  • 1 cup sugar
  • 1 tbsp flour
  • 1 tsp vanilla essence

Method:
  1. Melt butter and chocolate chips in a deep pan @ low heat.
  2. Add sugar to fully mix.
  3. Let it cool.
  4. Add eggs one by one and mix well.
  5. Add the flour and stir.
  6. Add vanilla essence and mix well.
  7. Pour in pan and bake it @175C for 25 minutes.
  8. Bake until the sides of the cake pull in.
  9. Let it cool and then transfer to a cake plate.

Another Chocolate Cake

Ingredients:

  • 1 3/4 cup flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 extra large eggs
  • 2 tsp vanilla essence
  • 1 cup of hot water

Method:
  1. Sift the flour, sugar, cocoa powder, baking powder, baking soda and salt into the bowl and mix until combined.
  2. In another bowl mix buttermilk, eggs and oil.
  3. With the mixer on low speed, slowly add the wet ingredients to the dry.
  4. With the mixer still on low and the water , stir to just to combine scraping the bottom of the bowl with a rubber spatula.
  5. Pour the batter into two 8 inch round cake tin.
  6. Bake @ 175C for 40-45 minutes, until a cake tester comes out clean.
  7. Cool in the pan for 30 minutes , then turn them out onto a cooling rack and cool completely.



Decorate with the icing.

Rick Bayless Rustic Chocolate Cake



Ingredients:

  • 100 grams butter
  • 100 grams chocolate (Dark , I used milk)
  • 3 eggs
  • 3/4 cup sugar
  • 1 tsp vanilla essence
  • 1/2 tsp salt
  • 1/2 cup flour
Method:

  1. In a pan, melt butter and chocolate stirring every few seconds until the mixture is smooth. 
  2. Allow to cool
  3. In a large bowl combine sugar and egg , beat at a high speed until mixture is fluffy.
  4. Beat in vanilla and salt.
  5. Stir in the chocolate mixture, then flour stir until batter is uniform.
  6. Preheat the oven @ 175C.
  7. Pour into the pan.
  8. Bake for 40-45 minutes.
  9. Slice once the cake is cool.
  10. Sprinkle icing sugar on top.

Devil's Food Cake

Ingredients:
  • 1 1/2 stick or 175 grams butter softened
  • 1 3/4 cup  or 350 grams sugar
  • 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 2 tsp vanilla essence
  • 2 cups or 240 grams flour
  • 3/4 cup or 65 grams coco power
  • 4 large eggs
  • 1 1/2 cup milk

Method:
  1. In a large mixing bowl, cream  softened butter, sugar, salt , baking soda and the vanilla until fluffy.
  2. In another bowl , whisk together the flour and coco making sure no lumps remain.
  3. Beat in the eggs to the butter mixture, one at a time. Beating well after each addition.
  4. Slowly blend 1/3 of the flour, mixture into the creamed mixture.
  5. Then add 1/2 of the milk and so on until all the dry ingredients and the milk have been beaten in.
  6. Scraping the sides as needed.
  7. Divide the batter evenly between the pans and smooth.
  8. Preheat the oven @ 175C. Line the pans with butter paper.
  9. Bake the cake in the oven for 35 mts or until the toothpick comes out clean.
  10. Remove the cakes from the oven and allow to cool.

Chocolate Cake




Ingredients:

  • 1 3/4 cup flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 cup hot coffee
  • 2 extra -large eggs
  • 1 tsp vanilla essence

Method
  1. Sift the flour, sugar, cocoa , baking powder, and salt into the bowl and mix well.
  2. Combine the buttermilk, oil, eggs and vanilla. 
  3. Slowly add the wet ingredients to the dry with beater still on.
  4. Add the coffee and stir just to combine.
  5. Scrap the bowl with a rubber spatula.
  6. Preheat the oven to 175C. 
  7. I used 2 8in rounds.
  8. Pour the batter into the prepared and bake for 35 -40 minutes.
  9. Cool in the pans for 30 mts.

Chocolate Cake ....... by Life's a feast

Just love the way .... the chocolate cake by life's feast...... and out come was excellent.... did a bit of change for the icing...!!

Here goes the recipe..

Ingredients:

  • 175 grams flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tbsp cocoa powder

  • 150 grams sugar ( I did powder it)

  • 2 eggs lightly beaten

  • 150 ml warm milk

  • 150 ml oil

  • 1 tsp vanilla essence

  • ( she did use 1 tsp of cinnamon powder)

Method:

  1. Put the flour, baking powder, baking soda, sugar and cocoa powder in a large mixing bowl and mix well.

  2. In a separate mixing bowl, whisk together eggs, warm milk, oil and vanilla essence.

  3. Make a hole in the center of the dry ingredients and pour little of the liquid mixture .

  4. Mix them well  and repeat it until all the ingredients are mixed well.

  5. Preheat the oven at 175C.

  6. Pour the batter into a tin and bake for 30 minutes.

  7. Let it cool for 10 minutes.





For the Icing: ( As for the icing work my daugtie wanted to do it so I think that's quite a work on a 9 year old kid)
  • 1/2 cup icing sugar

  • 3 tbsp vegetable shortening

  • 1 tbsp cocoa powder

  • 2 or 3 tbsp warm water

Beat the shortening then add icing sugar.
Add cocoa powder and continue beating them until .
Add warm water little by little and depending upon consistency you want.
Pour over the cake .

Yet ... another Chocolate Cake with icing.!!



Ingredients:

  • 1 cup of flour
  • 1 cup of sugar + 2 tbsp 
  • 1/3 cup cocoa
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter melted and warm
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 tsp vanilla essence
Method:
  1. In a large bowl mix the flour , sugar, cocoa, baking soda and salt.
  2. Add the butter, eggs and vanilla and beat them.
  3. Add milk and beat until the batter is smooth.
  4. Preheat the oven at 175C.
  5. Pour the batter into the cake tin.
  6. Bake for 30 minutes or until the toothpick comes out clean.
For the Ganache: ( Reicpe source : joy of baking)
  • 113 grams semi sweet chocolate  chips
  • 100 ml of double cream
  • 1 tbsp butter
Method:
  1. Place the chocolate chips in a heat proof bowl.
  2. Heat the cream and butter in a small pan.
  3. Bring just to boil.
  4. Pour the cream and butter over the chips.
  5. And  stir until it is mixed well.
To cover the cake:
  • Using a spatula  cover the sides and top of the cake with a layer of ganache
  • For the writing I used butter cream icing.

Chocolate cake with cream



  • 2 cups sugar
  • 1 3/4 cup flour
  • 3/4 cup cocoa
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup  vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water( a tsp of instant coffe powder)

  1. Heat oven to 175C
  2. Stir  together sugar, flour, cocoa  baking powder ,soda and salt in a large bowl.
  3. Add eggs, milk , oil and vanilla  beat on medium for 2 mints
  4. Stir in boiling water
  5. Pour batter into the tin. bake for 30 minutes
  6. Bake until toothpick comes out clean.
For Ganche

1 cup of cream
1 tbsp of cocoa powder
50 grams of butter
  • In a pan boil the cream with the butter and cocoa on a low flame till it heats up .
  • To assemble,  I was lazy to cut the cake  and spread the ganache. 
  • So poured the ganache over the cake....!!!

Sugar Icing

The cake is a chocolate cake with buttercream icing.

For the icing:
  • Beat butter and shortening well.
    • 1/2 cup butter 
    • 1/2 cup shortening
  • Mix icing powder and water or milk.
    • 4 cups icing sugar (little by little)
    • 2 tbsp of water or milk.
  • Mix well until your required consistency.
