Chilly chicken fried

Ingredients:

  • 750 grams boneless chicken  cut into small pieces
For the marination
  • 1 tesp ginger paste
  • 1 tsp garlic paste
  • 1 tbsp onion paste
  • 2 tbsp soy sauce
  • 1/2  tsp pepper powder
  • 1 tsp salt to taste
Ingredients for stir frying

  • 4 tbsp garlic chopped
  • 3 tbsp green chillies chopped
  • 1 cup spring onion chopped
  • 1/2 tsp pepper powder
  • Oil for frying

Method:

Marinate the chicken with the marinade ingredients for 4 hours or overnight.

Fry the chicken in a deep wok with 2 tbsp oil until it turns tender and brown.

Remove the chicken and keep it aside.

Add another 1 tbsp of oil into the wok and stir fry the garlic, green chillies and spring onions.

Add the fried chicken, pepper and if needed salt into it and mix well.

After few minutes remove from the fire . If necessary  add salt to taste and little soya sauce.

Chicken Masala Fry

Its an easy Chicken fry.

Ingredients:

  • 800 grams chicken cut into small pieces
  • 2 tbsp ginger - garlic crushed
  • 8 green chillies sliced
  • 1 tbsp pepper
  • 1 tbsp coriander powder
  • salt to taste
  • coriander leaves

Method

  1. Add the above ingredients to the chicken and cook
  2. Cook until all the water is absorbed.
  3. Add oil ( 1- 2 tbsp) and fry the masala without the chicken.
  4. Add the chicken and fry till all the masala mixes well with chicken.
  5. Sprinkle the coriander leaves in the end.

Chicken Masala

Ingredients:

1 chicken
5 onion
2 tomatoe
2 tbsp ginger
2 tbsp garlic
10 green chillies
3 tbsp pepper
2 tbsp coriander powder
2 tsp garam masala
salt to taste
1/2 bunch coriander leaves
1/2 bunch mint leaves

Method:

Slice onions into very thin slices.
Chop the tomatoes.
Crush ginger, garlic and green chillies in a chopper.
Chop the leaves and side aside.

Heat 4 tbsp oil in deep pan.
Add onions and saute until golden brown.
Add the tomatoes saute until very soft.
Add the ginger , garlic and green chillies and saute for few minutes
Add the the chicken and fry for 3 minutes.
Add coriander powder , pepper crushed or powder and garam masala.
Add salt and the rest of the leaves. if needed add 1/2 cup water.

Cook until chicken is cooked and water is absorbed.
Add oil if need and fry for few minutes more.

Ginger Chicken


Ingredients:


  • 400 grams chicken breast
  • 50 grams ginger
  • 50 grams garlic
  • 100 grams large onion
  • 1/2 tbsp vinegar
  • 1/2 tbsp chilli powder
  • 1/4 tsp orange red colour(optional I didn't)
  • 1 tbsp tomato sauce
  • salt to taste 
  • 1/2 tsp pepper powder
  • Oil to fry and cook




Method

Cut the chicken into thin stripes.
Marinate with soya sauce (1 tbsp), salt ,pepper and juice of 1 lime.

 For 4 hours or overnight.

Grind ginger, garlic and onions together and keep aside.

Heat the oil, fry the marinated chicken pieces till light brown.
Drain and keep aside.

Reheat the oil add the ginger, garlic onion mixture and fry till fragrant.
Add the chilly powder, vinegar, pepper powder, tomato sauce.

Add chicken pieces and still  till all the pieces are well coated.
Add salt and cook till gravy thickens.

Serve on a bed of salad leaves.
Sprinkle coriander leaves on top.
Serve hot.

Easy chicken fry



  • Clean the chicken and marinate with chili powder , soya sauce and salt. And keep it aside.
    • 1/2 kg chicken cut into small pieces
    • 2 tbsp chili powder
    • salt accordingly
    • 1 tbsp soya sauce.

  • Boil the chicken with water and cook until  water evaporates.
    • 1/2 cup water

  • Add oil into it and fry well. Add few coriander leaves.
    • 3 tbsp oil
    • Few string of coriander leaves

Easy way of Chicken fry

In this chicken fry I use a chilly paste combination  of  long Mangalore red chillies , salt, ginger and garlic. I lightly roast them and then grind with tamarind water. When time permits I grind a large amount of this paste and store it in refrigerate.



  • 2 tbsp of  chilly paste ( or a combination of 1 tbsp chilli powder and 1 tbsp ginger, garlic paste)
  • 1 tbsp of soy sauce
  • salt to taste
Cut the chicken to the required sizes.
Wash them .
In a bowl mix the chicken with all the ingredients.
Cook until the chicken is cooked( don't add water).
Add 2 tbsp of oil when the water is absorbed.
Fry them well.

Chicken Sukha



Chicken sukha was something I was missing coming from a place mangalore. My friend gave me the recipe , the proper long way... I wanted to make it something quick and but still have the taste of chicken sukha. I was also lazy to saute onion , so here I ended up with my version of sukha.


Ingredients:

  • 1/2 chicken
  • 1 onion large chopped
  • 1/2 tomato chopped
  • 1 tbsp ginger n garlic chopped
  • 1/2 cup coconut
  • 3 tsp coriander 
  • 1 tsp garam masala
  • 2 tbsp or more coconut oil
Method:

Grind the chopped onion, tomato, ginger and garlic. 
Boil the chicken with 1/2 cup water,coriander powder, the grind mix and coconut.
Add coriander leaves and gram masala.
Cook till the water is absorbed.
Add the oil and fry for few minutes.
