- 3/4 cup butter
- 3/4 cup castor sugar
- Cream the butter and castor sugar in a mixing bowl.
- 2 egg yolks
- Add the yolks into it.
- Beat it.
- 1 1/2 cups bread crumbs
- 1/2 tsp baking powder
- Juice of 1 lime.
- 1 tbsp grated lemon rind
- Add the bread crumbs & baking powder.
- Mix into it.
- Then the lemon juice and lemon rind.
- Mix into it.
- Pour the mixture into ia greased butter and lined charlotte bowl.
- Steam for 30 to 45 minutes.
- For the Meringue and Sauce
- 2 egg whites
- 2 tbsp sugar
- 1 apple grated
- Whip the egg whites .
- Add sugar little by little.
- Add the the grated apple and mix well.
- Spread the mixture on oven proof plate.
- Sprinkle with castor sugar little.
- Bake in the oven until it turns lightly brown.
- Turn the steamed pudding into the baked Meringue.
- Serve hot.
