Belvoir Lemon Pudding

  •  3/4 cup butter
  • 3/4 cup castor sugar
    • Cream the butter and castor sugar in a mixing bowl.

  • 2 egg yolks
    • Add the yolks into it.
    • Beat it.

  • 1 1/2 cups bread crumbs
  • 1/2 tsp baking powder
  • Juice of 1 lime.
  • 1 tbsp grated lemon rind
    • Add the bread crumbs & baking powder.
    • Mix into it.
    • Then the lemon juice and lemon rind.
    • Mix into it.
    • Pour the mixture into ia greased butter and lined  charlotte bowl.
    • Steam for 30 to 45 minutes.

  • For the Meringue and Sauce
    • 2 egg whites
    • 2 tbsp sugar
    • 1 apple grated
      • Whip the egg whites .
      • Add sugar little by little.
      • Add the the grated apple and mix well.
        • Spread the mixture on oven proof plate.
        • Sprinkle with castor sugar little.
        • Bake in the oven until it turns lightly brown.
        • Turn the steamed pudding into the baked Meringue.
      • Serve hot.
