Ariy Unda


  • 1 cup ponnai or matta rice
    • Wash the rice well.
    • Spread the rice into a small towel to dry.
    • Dry roast the rice in a pan until golden brown in a medium flame.
    • Remove from the heat and let it cool.

  • 10 pcs cashew
    • Dry roast them also.
    •  Grind the rice into fine powder.
    • Then the cashews into fine powder.
    • Mix in a bowl.

  • 6 tbsp jaggery
  • 6 tbsp grated coconut
    • Grind it for one or 2 pulse. (Do not not make it into a paste)
    • Mix into the dry powder.
    • Add salt to taste.
    • Mix well using your hand.
    • Take some of the mixture shape them into lime sized balls.

Spring rolls

  •  Heat oil, strir fry ginger and garlic till light brown. 
    • 1 tbsp ginger chopped into small pieces.
    • 1 tbsp garlic chopped
    • 3 tbsp oil
  • Add spring onion, cabbage and carrot. Stir fry for few minutes.
    • 2 spring onions with leaves chopped
    • 2 cups thinly sliced cabbage
    • 1 cup thinly sliced carrot
  • Add green chillies and chicken into it. Stir fry few more minutes.
    • 2 green chilles sliced
    • 1 cup chicken shredded or chopped in the chopper
  • Add salt, soya sauce  and pepper into it. Stir fry for few minutes.
    • salt to taste
    • 1 tbsp soya sauce
    • 1 tsp pepper
  • Keep it aside to cool.
  • Mix together egg, salt, cornflour and flour. Keep it aside for an hour.
    • 1 egg
    • 1 cup flour
    • 1 cup cornflour
    • salt to taste
  • Heat a pan and make thin pancakes by cooking only one side.
  • Keep the filling on the cooked side. Fold the edge over and roll half way.
  • Fold both sides towards the center. Roll further and seal.
    • One can either fry directly or dip in beaten egg and roll over bread crumbs.
    • And then fry.
      • 1 egg beaten
      • required bread crumbs.
  • Deep fry the spring roll till brown. Drain the oil on  paper.

Chicken Parcel


Ingredients


  • For the filling:
    • 500 grams or 1 cup chicken minced
    • 1 medium onion chopped
    • 1 tbsp ginger garlic and green chillies finely chopped
    • 1 tsp garam masala
    • 3 tbsp coriander leaves
  • 50 samosa switz pastry
  • Oil for deep frying
Method:

  • For the filling
      • Boil the chicken in pepper and salt.
      • Once cooked remove the bones.
      • Mince the chicken with coriander leaves using a chopper
    • Add 2 tbsp oil in pan.
    • Add the onions and fry until it turns transparent.
    • Then add the ginger, garlic and green chillies and fry for a minute.
    • Then add the minced chicken mix.
    • Add the garam masala and mix well.
    • Add 2 tbsp water and mix well.
    • Leave it simmer.
  • Take 2 samosa sheet , place one horizontally and vertically on top of each other.
  • Place the filling in the center.
  • Cover the filling by flipping the cover one side and then the other side.
  • Seal the cover with a little paste of maida.
  • Deep fry in the oil or fry in the airfryer if you r health freak

Meat Cutlet...

Ingredients:


  • 1 1/2 cup Minced mutton cooked or left over mutton from the gravy( if using left over mutton then u need mince them)
  • 2 Medium sized potato
  • 1 tsp ginger-garlic chopped
  • 1 Onion chopped
  • 3 Green Chilles
  • 1 tsp Turmeric powder
  • 1/2 Bunch coriander leaves 
For dipping and frying:
  • 1 Egg
  • Bread Crumbs
  • Oil for frying
Method:

Boil potato with skin.
Once cooked remove the skin and mash it. Keep it aside.

Heat a pan with 2 tbsp of oil.
Add the chopped onion and saute for few until soft.
Add ginger- garlic.

Add the green chillies, turmeric and salt and saute for few minutes.
Add the minced mutton and chopped coriander leaves and mix well.
Remove from heat.

Add the cooked and mashed potato.
Mix well.

Make small lime size balls and keep aside

Beat the egg in a bowl and keep aside.

Flatten each ball and deep in the egg.


Cover it with breadcrumbs.
Deep fry in hot oil.

Drain the oil and serve.

Semolina Laddu........thari unda..!!

Ingredients:

  • 1 cup semolina or Rava
  • 1/2 cup grated coconut
  • 1/2 cup sugar
  • 1 tbsp raisins
  • 1 tbsp ghee
Method:

Roast the semolina.
Add sugar, coconut, raisins and ghee and mix well.

Remove from the fire and form making lime sized balls.

Banana Cotton Buds....Unnakkayi





Ingredients:



4 ripe bananas
3 eggs
4 tbsp sugar
1 tsp raisins
1 tbsp chopped cashewnuts
2 tsp oil/ghee
Oil for frying

Method:

Steam the banaas until peel separates slightly.
Remove and grind the banana to a smooth paste without adding water.
Keep aside.

Mix the eggs with sugar.
Heat 2 tsp ghee/oil in a saucepan.
Add the cashew nuts and raisins and fry for a minute.
Add the egg mixture and stir it well till it reaches scrambled egg consistency.

Oil you hands and take small balls( size of a lime ) of the ground banana.
Flatten on your palm into small disc.
Put 2 tsp of scrambled egg in it.
Fold the edges and press lightly.
Now roll it with your hands, and shape it like cotton buds ( both ends pointed).

Heat oil and deep fry to a golden brown on all sides.

Serve.

Sweet Banana Fritters




  • 3 Fully ripe malabar bananas
    • Peel and cut the bananas into thin slices.

  • 2-3 tbsp sugar
  • 1 egg
  • 1 cup maida
  • 2 tbsp gram flour
    • Beat the egg and sugar.
    • Add flour and a little water may be 1/4 cup.
      Add a pinch of salt and if need a pinch of cardamom powder.    

  • Oil for frying
    • Heat the oil.
    • Dip the banana slices in the batter.
    • Deep fry to a golden brown.
    • Drain the excess oil from the fried banana.

Dahi Vada....



Ingredients:
For vada

  • 1 cup urad dhal
  • 1/4 cup water
 salt to taste
  • oil for frying
For the dahi
  • 2 cup yogurt
  • 1 cup water
  • black salt to taste 
  • 1/2 tsp sugar
For garnishing
  • Tamarind chutney
  • 1/2 tsp red chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp chat powder
  • coriander leaves 

Method:

Wash the dhal and soak it for 3-4 hours.
Grind it a thick smooth paste along with water and salt.
The batter should be thick so that you can scoop them.
Heat oil for medium. 
Scoop out the batter using a ice-cream scoop and drop it into the oil.
Deep fry the until it is golden brown.
Drain the excess oil.

Soak the vadas in the water immediately.
Remove and squeeze out the excess water.

Arrange in a bowl and keep it aside.

For the Dahi:

Whisk yogurt and water till smooth.
Add salt and sugar and mix.

Pour over the vadas.

For Garnishing:

For Tamarind chutney:
Boil 1 cup of water with tamarind the size of lime , one date and small piece of jaggery or 3 tbsp of sugar.
Let it boil until it reduces into half of the quantity.
Drain through the sieve.

Sprinkle red chilli powder and cumin powder over the dahi.
Granish with coriander leaves.
Drizzle few drops of tamarind chutney while serving.

Serve chilled.

Chicken Samosa



Ingredients:



For the wrap:
      Used ready made  Samosa wrap

For the filling:
  • 4-5 pieces chicken shredded  from leftover curry( or boil 5 pieces of chicken or 200 grams of boneless chicken) 
  • 2 onions sliced
  • 1 tbsp ginger n garlic paste  
  • 1 tsp turmeric powder
  • 2 green chillies finely chopped
  • 2-3 tbsp coriander leaves chopped
  • salt to taste
  • 2 tbsp of oil
Oil for deep frying

Method:

For the Masala:
Heat oil .
Add the onions ,chillies  and salt.
Fry till the onions are lightly brown.
Add the ginger garlic paste , shredded chicken and coriander leaves.
Fry for a few seconds more.
Remove from the fire and keep aside.




To wrap:

 Fold on end over in a diagonal to create a triangle.
Make a paste using flour and water to seal.
Stick down then fold again the other way, sticking it down with the paste.
Fill the triangle with the fillling .
Fold the flap withe the paste.
Repeat it for all until the filling is used up.


Deep fry in hot oil.

Stuffed Banana in Syrup





Ingredients:
  • 1 Ripe Malabar banana
  • 2 tbsp sugar + 1 cup sugar for syrup
  • 1 egg
  • Cashews and Rasins  1 tbsp if u need
  • Oil for frying

Method:

Beat the egg with 2 tbsp sugar. 
Heat 1 tsp ghee.
Add the eggs and stir well to scrambled- egg consistency.
Add cashew and raisins.
Remove from the fire.

Peel the the banana. 
Cut into 2 and slit it into four without cutting the ends.
Heat the oil and slowly put the banana in it and fry until golden brown.
Remove and cool it a bit.
Stuff the banana with the scrambled eggs and keep aside.

In a pan boil sugar with 1cup of water.
When it reaches the syrup consistency.
Remove from the fire.

Pour over the stuffed banana. 
And Serve...

Irachi Pathiri

(stuffed Mutton or chicken Puris)

  • 1 cup whole wheat flour
  • 3/4  cup minced mutton or chicken
  • 2 medium onions
  • 2 green chillies (if you spicy then add 2 more)
  • 1 tbsp ginger n garlic grated
  • 1/2 bunch coriander leaves
  • 1tsp turmeric powder
  • Oil for frying 
  • salt to taste
Make a soft dough with flour and salted water and keep aside.
Cook the minced mutton or chicken with salt and turmeric powder.
Slice the onions finely.
Chop the green chillies and coriander leaves.

Heat 1 tbsp oil and fry the onions till transparent.
Add chillies, ginger and garlic.
Add the mutton or chicken, coriander leaves and turmeric powder and salt.
Stir well until the mutton or chicken is well mixed and remove from the fire.

Divide the dough into balls.
Roll out each ball of dough into a chapati like round. 
Take a round cookie cutter and make small circles.
Take the masala and spread one side of the small circle and fold it.
Press the edges well and then cut them with a design cutter.
Deep fry in hot oil, till golden brown.




Note: If you want to add hard boiled egg  one can.  Need cut the hard boiled egg into 6 to 8 pieces and stuff inside the mini circles with masala.

Bajiya


  • 1 cup kadla dal or Thoor dal
  • 1 small onion
  • 2 green chillies
  • 1/2 tsp  chilli powder
  • 1/4 tsp turmeric powder
  • 2 tbsp coriander leaves or curry leaves
  • Oil for frying
  • salt to taste
Wash and soak the dal for  2 hours and grind coarsely.
Chop the onion, green chillies, coriander leaves or curry leaves.
Add all the ingredients to the dal and mix it well.
Add salt to taste.
Heat the oil.
Shape the mixture into small mini balls and then  press a bit.
Deep fry to a golden brown and remove.

French Toast



  • 6 slices of bread
  • 2 eggs
  • 4 tbsp sugar
  • 2 tbsp milk
    • Beat the eggs, milk with sugar.
  • Ghee as required
    • Heat ghee or butter on a tawa.
    • Dip each slice of bread in the egg mixture. Dredging on both sides.
    • Place the slices on hot tawa. 
    • Cook for few minutes until golden brown.
Serve hot .
In case you are storing in the fridge. Warm it in the toaster for few minutes.
