Coffee Cupcakes



What you need:

  • 110 grams butter
  • 1 cup sugar
  • 2 eggs
  • 3 tbsp instant coffee
  • 2 tbsp hot water
  • 1 cup milk
  • 1 tsp vanilla essence
  • 2 cups flour
  • 1 tsp baking soda

Method:
  • Beat butter and sugar until well light and fluffy.
  • Then add two eggs into into it and beat well.
  • Mix the three tbsp coffee powder with two tbsp hot water into a paste and then dilute with milk.
  • Add vanilla essence.Add keep aside.
  • Add flour into the eggs mixture and keep beating light.
  • Slowly add the coffee mixture into it.
  • Beat until the batter is mixed properly.
  • Preheat the oven @175C for 10 minutes.
  • Scoop the batter into the muffin tray on cupcake liners.
  • Bake for 15-20 minutes or until a tooth pick comes out clean.
  • Allow it cool .
  • If you enjoy decorate with coffee butter cream.

I always wanted the coffee flavour to be strong in the cupcakes.  One of the bloggers suggested not to  add brown sugar as it could take over the flavour of coffee in  the cupcakes. Decided to take her advice. Another blogger advised  to add more of instant coffee.

The result is moist, delicious and the coffee flavour..!!

Chocolate chip Coffee Cookies








What I need to mix:



  • 1/2 cup butter
  • 1/2 sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 4 tbsp instant coffee granulated
  • 1 tbsp water
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips
Method:

  1. Whisk flour, baking soda, baking powder, 2 tbsp coffee powder and salt. 
  2. Set a side.
  3. Beat butter.
  4. Whisk in sugars until combined.
  5. Add the eggs beat until well mixed.
  6. Mix 2 tbsp coffee powder with 1 tbsp water.
  7. Then add into the wet ingredients and mix well.
  8. Add the dry mix into the wet mix , fold well.
  9. Last add the chocolate chips into the mix well.
  10. Scoop the dough into a baking  tray. 
  11. Bake in a preheat oven @ 175C for 10 -15 minutes.
  12. Allow to cool on the tray for another 10 minutes.


For the Coffee drizzle:

  • 1/2 tsp coffe powder
  • 1tbsp water 
  • 1/2 cup icing sugar
            • Dissolve the coffee into water.
            • Add the icing sugar and mix until smooth.
            • Drizzle over the cooled cookies.

Mocha cupcakes with whipped cream




Ingredients:

  • tbsp instant espresso coffee powder
  • 6 tbsp butter
  • 85 grams caster sugar
  • 1 tbsp honey
  • 200 ml water
  • 225 grams plain flour
  • 2 tbsp cocoa powder
  • 1 tsp bicarbonate of soda
  • 3 tbsp milk
  • 1 large egg, lightly beaten

 Topping
  • 225ml whipping cream
  • cocoa powder sifted for dusting.

Method:

  1. Put the coffee powder, butter , sugar , honey and water in a saucepan and heat gently, stirring, until the sugar has dissolved . Bring to the boil, then reduce the heat and simmer for 5 minutes. Pour into a large heatproof bowl and cool.
  2. When the mixture has cooled, sift in the flour and cocoa. Dissolve the bicarbonate of soda in the milk, then add to the mixture with the egg and beat together until smooth. Spoon  the mixture into the paper cases.
  3. Bake the cupcakes in a preheated oven, 180C/350F, for 15-20 minutes or until well rise and firm to the touch. Transfer to a wire rack to cool.
  4. For the topping whisk the cream in a bowl until it holds its shape. Just before serving, spoon a heaped teaspoonful of cream on top of each cake , then dust lightly with sifted cocoa. Store the cupcakes in the refrigerator until ready to serve.
