What I need to mix:
- 1/2 cup butter
- 1/2 sugar
- 1/4 cup brown sugar
- 1 large egg
- 4 tbsp instant coffee granulated
- 1 tbsp water
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips
Method:
- Whisk flour, baking soda, baking powder, 2 tbsp coffee powder and salt.
- Set a side.
- Beat butter.
- Whisk in sugars until combined.
- Add the eggs beat until well mixed.
- Mix 2 tbsp coffee powder with 1 tbsp water.
- Then add into the wet ingredients and mix well.
- Add the dry mix into the wet mix , fold well.
- Last add the chocolate chips into the mix well.
- Scoop the dough into a baking tray.
- Bake in a preheat oven @ 175C for 10 -15 minutes.
- Allow to cool on the tray for another 10 minutes.
For the Coffee drizzle:
- 1/2 tsp coffe powder
- 1tbsp water
- 1/2 cup icing sugar
- Dissolve the coffee into water.
- Add the icing sugar and mix until smooth.
- Drizzle over the cooled cookies.
