Kai Pola

  •  Plantains(Kerala banana)  need to be ripe. Slice them twice, so you get four long pieces ( I always remove the veins(the black part) of this ) and then chop them into small 1/2 inch size.
    • 3 ripe plantains

  • Heat ghee in a pan. Fry the cashew nuts until light golden brown and keep it aside. Then fry the raisins until plump and keep it aside.
    • 2 tbsp ghee
    • 6 cashew nuts split into 2
    • 6 raisins

  • Add more ghee , Now add the chopped  plantains and fry until golden brown in color. 
    • 2 tbsp ghee

  • Beat the eggs and sugar well with a little pinch of cardamom.
    • 3 eggs
    • 3 tbsp sugar

  • Mix the fried plantains with a egg mixture with a pinch of baking powder.
  • Preheat a oven at 175C for 10 minutes.
  • Brush the pan with ghee.
  • Pour the mixture and put the nuts on top. Bake for 15 minutes until a tooth pick comes out clean.
  • Flip it over a plate before serving.

Truffles ...Bran flakes




















Ingredients:
  • 2 cups left over crushed Bran flakes
  • 1cup left over  crushed brownie
  • 4 digestive biscuit
  • 200 ml Puck cream
  • 100 gms chocolate chips
  • 1 tbsp butter
Method:

Place the chocolate chips in a deep bowl.
Heat the cream. 
Add the butter when it boils.
Pour over the chocolate chips, leave it for a minute and mix well.

Mix all the crushed mix with the above chocolate mix.
Roll in the size of a lime.
Sprinkle icing sugar or cocoa powder.

Dry Fruits Cream.....



  • 25 black grapes
  • 25 kismis
  • 25 Almonds
  • 25 Cashew
  • 10 Dates
  • 10 Fig
  • 25 grams Pista without salt
    • Cut all the dry fruits into small pieces.
  • 2 Fresh Cream
  • 1 tin milkmaid
    • 1/4 tin of milkmaid and 2 fresh cream  with the dry fruits.
    • Keep aside.
  •  1 glass Milk
  • 1 fresh cream
    •  Boil Milk.
    • The add 1 fresh cream and milkmaid and mix well.
  • 2 tsp gelatin
  • 1/4  glass hot water
    • Add 2 tsp of gelatin in 1/4 glass of hot water.
    • Mix well.
    • In a mixer beat the milk mixture and the gelatin well.
    • Pour in a tray or short glasses and keep in the fridge to set.
    •  Once it is set cover it up with the dry fruits mixture.

If you need you can decorate it with cornflakes or strawberry.

Semolina Laddu........thari unda..!!

Ingredients:

  • 1 cup semolina or Rava
  • 1/2 cup grated coconut
  • 1/2 cup sugar
  • 1 tbsp raisins
  • 1 tbsp ghee
Method:

Roast the semolina.
Add sugar, coconut, raisins and ghee and mix well.

Remove from the fire and form making lime sized balls.

Banana Cotton Buds....Unnakkayi





Ingredients:



4 ripe bananas
3 eggs
4 tbsp sugar
1 tsp raisins
1 tbsp chopped cashewnuts
2 tsp oil/ghee
Oil for frying

Method:

Steam the banaas until peel separates slightly.
Remove and grind the banana to a smooth paste without adding water.
Keep aside.

Mix the eggs with sugar.
Heat 2 tsp ghee/oil in a saucepan.
Add the cashew nuts and raisins and fry for a minute.
Add the egg mixture and stir it well till it reaches scrambled egg consistency.

Oil you hands and take small balls( size of a lime ) of the ground banana.
Flatten on your palm into small disc.
Put 2 tsp of scrambled egg in it.
Fold the edges and press lightly.
Now roll it with your hands, and shape it like cotton buds ( both ends pointed).

Heat oil and deep fry to a golden brown on all sides.

Serve.

Caramel Pudding....

I could say one of the first puddings  I tasted or remembers or the one which I tried is "Condensed milk pudding " this is what I  call it ....:) Each one of us have different ways of making it. The best part is the tin of nestle condensed milk  still remains the same shape , may be even the design ...only that  changes are the photos's  .....as for the taste it still is one of best pudding....!!

Ingredients
 1 tin Milk
1 tin condensed Milk
4 eggs
2 tbsp sugar + 3 tbsp for  caramelizing

Method :

Mix condensed milk tin ,milk, eggs and 2 tbsp sugar .
Beat with a hand beater for 5 minutes.
Caramelize the sugar till golden brown ,in a deep round pan.
Pour the mixture into the pan. ( or small moulds )
Steam in a steamer until it is cooked or when a knife come out clean.
Let it cool.
Invert onto a serving platter.




One can serve warm or chilled. I would prefer chilled...!!

Stuffed Banana in Syrup

Ingredients:
  • 1 Ripe Malabar banana
  • 2 tbsp sugar + 1 cup sugar for syrup
  • 1 egg
  • Cashews and Rasins  1 tbsp if u need
  • Oil for frying

Method:

Beat the egg with 2 tbsp sugar. 
Heat 1 tsp ghee.
Add the eggs and stir well to scrambled- egg consistency.
Add cashew and raisins.
Remove from the fire.

Peel the the banana. 
Cut into 2 and slit it into four without cutting the ends.
Heat the oil and slowly put the banana in it and fry until golden brown.
Remove and cool it a bit.
Stuff the banana with the scrambled eggs and keep aside.

In a pan boil sugar with 1cup of water.
When it reaches the syrup consistency.
Remove from the fire.

Pour over the stuffed banana. 
And Serve...

French Toast



  • 6 slices of bread
  • 2 eggs
  • 4 tbsp sugar
  • 2 tbsp milk
    • Beat the eggs, milk with sugar.
  • Ghee as required
    • Heat ghee or butter on a tawa.
    • Dip each slice of bread in the egg mixture. Dredging on both sides.
    • Place the slices on hot tawa. 
    • Cook for few minutes until golden brown.
Serve hot .
In case you are storing in the fridge. Warm it in the toaster for few minutes.
