- Plantains(Kerala banana) need to be ripe. Slice them twice, so you get four long pieces ( I always remove the veins(the black part) of this ) and then chop them into small 1/2 inch size.
- 3 ripe plantains
- Heat ghee in a pan. Fry the cashew nuts until light golden brown and keep it aside. Then fry the raisins until plump and keep it aside.
- 2 tbsp ghee
- 6 cashew nuts split into 2
- 6 raisins
- Add more ghee , Now add the chopped plantains and fry until golden brown in color.
- 2 tbsp ghee
- Beat the eggs and sugar well with a little pinch of cardamom.
- 3 eggs
- 3 tbsp sugar
- Mix the fried plantains with a egg mixture with a pinch of baking powder.
- Preheat a oven at 175C for 10 minutes.
- Brush the pan with ghee.
- Pour the mixture and put the nuts on top. Bake for 15 minutes until a tooth pick comes out clean.
- Flip it over a plate before serving.
