Chocolate Chip Cookies 3

  •  168 gms (3/4 cup) unsalted butter
    • Place the butter in sauce pan and melt it on a low heat.
    • Keep stirring and scrape the butter from the sides and bottom.
    • Keep doing it until the butter turns into golden brown.
    • Remove from heat and let it cool until warm

  • 212 gms (1 cup) light brown sugar
  • 1/4 cup sugar
    • In a large mixing bowl combine the golden brown butter, light brown sugar and granulated sugar.
    • Use a spatula to mix well.

  • 1 large egg 
  • 1 large egg yolk
  • 1 tbsp vanilla essence
    • Add the eggs (room temperature) into the mix.
    • Add the essence and mix well.

  • 1 3/4 cup (220g) flour
  • 3/4 tsp baking soda
    • Sieve in the flour, baking soda and a pinch of salt.
    • Mix until the dough should be soft but not sticky. 
    • Do not over mix it.

  • 1 1/4 cup (212g) chocolate chips
    • Add it to the dough evenly. 
    • Cover and keep it in the refrigerator for more than a hour.

  • Remove from the fridge. 

  • Preheat the oven at 175C  for 10 minute.

  • Scoop the batter with medium ice cream scoop into a baking tray.

  • Bake for 10 to 12 minutes or until the cookies have puffed up with the edges are lightly golden brown.

Oatmeal & Chocolate chips Cookies




  • 1 tsp baking soda
  • 1 1/2 cup flour
  • 1 tsp salt
  • 1 tsp powdered cinnamon
  • 2 tbsp cocoa
    • Remove 2 tbsp of flour and add the cocoa into it.
    • Sieve the flour, salt, baking soda, cocoa powder and cinnamon.
    • Whisk in a bowl.
    • Keep it aside.

  • 2 stick butter (226 gms)
  • 1 cup dark brown sugar
  • 1/2 cup  granulated sugar
  • 2 eggs
  • 2 tsp vanilla essence
    • In a large bowl or stand mixer  add the butter (@ room temperature) cut into small pieces.
    • Add the brown sugar and granulated sugar.
    • Add the vanilla essence and eggs.
    • Beat the them until creamed together for 2 to 3 minutes on a medium high speed.
    • Add the dry ingredients into the wet ingredients.
    • Mix on low speed until well combined.

  • 3 cups oats
  • 1 cup of chocolate chips
    • Add the oats and chocolate chips.
    • Mix well.
    • Cover and keep in the fridge for 30 minutes.
    • Preheat the oven for 10 minutes at175C.
    • Line the baking sheet on a baking tray.
    • Using ice cream scoop lay the leaving little space between them.
    • Bake for 15 minutes or until a tooth pick comes out clean.
    • Remove from the oven  and allow the cookies to cool in the baking tray for few minutes.
    • Cookies stay fresh for a week.

Pin Wheel Cookies



  • 1/2 cup butter soft at room temperature
    • Beat butter until cream on a medium speed.
  • 1/2 cup white granulated sugar
    • Add sugar little by little and continue beating.
  • 1 egg yolk
  • 2 teaspoons vanilla
  • A pinch of salt
  • 1/2 tbsp baking powder
    •  Add egg yolk, vanilla essence, baking powder and pinch of salt.
    • Mix well.
  • 1 tbsp milk
    • Add milk and mix well.
  • 1 1/2 cup all purpose flour
    • Sift the flour into the mixture.
    • Mix it until it forms a dough.
      • 1 tbsp butter
        • In a small bowl place butter and milk and microwave it for 20 minutes.
      • 3 tbsp cocoa powder
        •  Add the cocoa powder and mix well.
        • Add the cocoa mixture and mix it with 1/2 of vanilla mixture.
        • Mix with stand mixture until you end up having a small chocolate dough.
      • Now we have two types of dough.
      • Place 2 sheets of baking paper.
      • Place the vanilla dough on one sheet and the chocolate on the other.
      • Roll the dough separately into a square, not very thin.
      • Place the chocolate square on top of the vanilla square.
      • Remove the wax paper on top(that we used to roll the chocolate dough).
      • Using a rolling pin, roll the dough to flatten it a bit.
      • Gently roll the dough, starting of the edge closet to you, as if you were rolling a carpet.
      • Cover the dough tube with baking paper and place it in the fridge for 30 minutes or in the freezer for 15 minutes  before we cut into cookies.
        1. Preheat the oven @ 175C for 10 minutes
        2. Take the dough ,using a knife cut into 1/4 inch slices of cookies.
        3. Bake for 15- 20 minutes, until a golden brown color.

Flourless Fudgy Chocolate Brownie Cookie- Gluten Free

Ingredients:

  • 100 grms semi sweet chocolate chips
  • 1 1/2 tbsp butter soft
  • 1 large egg at room temperature
  • 75 grms brown sugar
  • 1/8 tsp salt
  • 1 1/2tbsp corn starch
  • 1 tbsp cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp Milk chocolate chips.

Step By Step
  1. Melt chocolate and butter in a slow flame (100 in induction ).
  2. Keep stirring until  completely smooth and  melted.
  3. Keep aside.
  4. Beat egg, sugar and salt until pale and thick.
  5. Mix in warm chocolate until mixed well.
  6. Sift cornflour, cocoa powder and baking powder.
  7. Mix into the mixture.
  8. Add chocolate chips into it.
  9. Cover and refrigerate for 30-45 minutes.
  10. In the mean time , Preheat the oven at 175˚C for 10 minutes.
  11. Line a baking tray with baking paper.
  12. Scoop the fudgy  butter using ice cream scoops into the sheet.
  13. Bake for 10-15 minutes.
  14. Leave it cool completely on tray.

Chocolate chip Coffee Cookies








What I need to mix:



  • 1/2 cup butter
  • 1/2 sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 4 tbsp instant coffee granulated
  • 1 tbsp water
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips
Method:

  1. Whisk flour, baking soda, baking powder, 2 tbsp coffee powder and salt. 
  2. Set a side.
  3. Beat butter.
  4. Whisk in sugars until combined.
  5. Add the eggs beat until well mixed.
  6. Mix 2 tbsp coffee powder with 1 tbsp water.
  7. Then add into the wet ingredients and mix well.
  8. Add the dry mix into the wet mix , fold well.
  9. Last add the chocolate chips into the mix well.
  10. Scoop the dough into a baking  tray. 
  11. Bake in a preheat oven @ 175C for 10 -15 minutes.
  12. Allow to cool on the tray for another 10 minutes.


For the Coffee drizzle:

  • 1/2 tsp coffe powder
  • 1tbsp water 
  • 1/2 cup icing sugar
            • Dissolve the coffee into water.
            • Add the icing sugar and mix until smooth.
            • Drizzle over the cooled cookies.

Spice Cookies

What I need to bake:


  • 45 gms butter
  • 60 gms sugar
  • 1/2 baking soda
  • 40 ml water
  • 150 gms wheat flour
  • 3/4 tsp  ground cinnamom
  • 1/2 tsp cocoa powder
  • 1/2 tsp ground ginger
How I mix:
  1. Cream butter until light and fluffy, then add sugar.
  2. Dissolve baking soda in water. 
  3. Stir in dissolved soda one third or one quarter at a time.
  4. Fold in sifted dry ingredients   with wooden spatula.
  5. Place dough in plastic bag and refrigerate for 30 minutes.
  6. Roll out dough into 3 mm thickness on floured surface. cut out with cutters.
  7. Make stars patters or any other pattern.
  8. Place on baking tray  and bake @ 175 for 15 minutes.
For Icing:
  • Sift icing sugar(1/2 cup) in a bowl.
  • Add few drops of flavouring or colour if you like.
  • Stir  in water as required until smooth and the required consistency
  • Decorate the way you want.

Midnight cookies



Ingredients:

  • 9 tbsp/ 100 g butter softened 
  • 1 cup superfine sugar
  • 1 egg lightly beaten
  • 1/2 vanilla extract
  • 1 cup all purpose flour
  • 1/3 cup cocoa
  • 1/2 baking soda





That's all left @ the time of shot...!!!

Method:
  1. Place the butter and sugar in a large bowl and beat together until light and fluffy.
  2. Add the egg.
  3. Add the vanilla extract and mix until smooth.
  4. Sift in the flour, cocoa and baking soda.
  5. Beat until well mixed.
  6. With damped hands , roll wall nut size  into balls.
  7. Place on the baking sheet spaced well apart.
  8. Preheat the oven for 10 minutes @ 175C.
  9. Bake for 10-12 minutes until set.
  10. Let it cool.

Shortbread



Ingredients:

  • 8 tbsp butter cut into small pieces
  • 1 1/4 cup all purpose flour
  • pinch of salt
  • 1/4 cup superfine sugar
Method:

  1. Place the flour, salt and sugar in a large bowl and mix together.
  2. Add the butter and rub it into the dry ingredients.
  3. Continue to work the mixture until it forms a soft dough
  4. Light press the dough into the tart pan. 
  5. Using a knife, mark the dough into 8 pieces and prick all over with a fork.
  6. Preheat the oven for 10 mts @ 175C.
  7. Bake for 45 minutes or until the shortbread is firm and just colored.
  8. Let cool for few minutes , then sprinkle with sugar if needed.

Brownie Cookies


Ingredients:

  • 1 1/2 cup flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup unsalted butter
  • 1 large egg
  • 1/3 cup cocoa

Method:


  1. Preheat the oven to 175C.
  2. Whisk dry flour, salt and baking powder in a bowl.
  3. Mix butter, sugar, egg and cocoa in a mixer.
  4. Slowly add flour mixture  and mix until smooth.
  5. Wrap in a plastic and chill for at least 1 hour.
  6. Roll out the cookie dough.
  7. Cut into the required shape.
  8. Bake on cookie tray for 10-12 minutes.
  9. Until the edges are firm and center is puffed.

Chocolate Flower Cookies


Ingredients:

  • 1/3 cup cocoa powder
  • pinch of salt

Method:
  1. Sift the flour and  cocoa powder, keep it aside.
  2. Beat the butter and powdered sugar until light.
  3. Add the egg and beat it well.
  4. Add the vanilla essence, flour and cocoa and mix it well.
  5. Place in a piping bag fitted with a large star nozzle and pipe on a baking trays, slightly spaced apart to allow for spreading.
  6. Bake in a preheated oven at 175C for 15 minutes.
  7. Leave it cool.

Chocolate chip Oatmeal Bar

  • 1/4 cup oil
  • 1/2 cup brown sugar
  • 1/4 cup granulated  white sugar
  • 1 egg
  • 2 tbsp low fat milk
  • 1 tbsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cup oats (Quaker)
  • 1/2+1/3 cup flour
  • 1/2 tsp baking soda
  • 1/2 cup semi -sweet chocolate chips
Method:



  1. In a large bowl, combine oil, brown sugar, white sugar, egg, milk , vanilla and salt. 
  2. Beat until the sugars have dissolved.
  3. In a large bowl, combine oats, flour, baking soda and chocolate chips.
  4. Mix them.
  5. Add to liquid mixture and mix well.
  6. Transfer to the prepared tin and spread it.
  7. Preheat the oven at 175C.
  8. Bake it for 15-20 minutes until golden.
  9. Once cool, cut into squares and store tightly covered.

Viennese Chocolate Cookies

Viennese Chocolate Cookies


These biscuits have a fabulously  light, melting texture. You can leave them plain as I did or you can dip in chocolate to decorate. This recipe is from my first chocolate book 'what's  cooking chocolate'. I did a bit of change...


Ingredinets

  • 100 grams butter
  • 6 tbsp icing sugar
  • 75 grams self-raising flour , sieved
  • 3 tbsp cornflour
  • 175 grams chocolate chips ( dark chocolate)



























Method:

  1. Beat the butter and sugar in a mixing bowl until light and fluffy.
  2. Gradually beat in the flour and cornflour.
  3. Melt chocolate chips and beat into the biscuit dough
  4. Place in a piping bag fitted with a large star nozzle and pipe on a baking trays, slightly spaced apart to allow for spreading.
  5. Bake in a preheated oven, 175C for 15 minutes.
  6. Leave it cool slightly on the baking trays.
Tip: I found the dough too thick to pipe so added around 4 tbsp of milk  and beat it along.



For decoration : Dip the cookies in melted chocolate and leave to set.

Vanilla Hearts



Ingredients

  • 225 grams plain flour
  • 150 grams butter, cut into small pieces
  • 125 grams caster sugar
  • 1 tsp vanilla essence
Method:
  1.  Sift the flour into a large bowl.
  2. Add the butter and rub it in with your fingers until the mixture resembles fine breadcrumbs.
  3. Stir in the caster sugar and vanilla essence and mix together to form a firm dough.
  4. Roll out the dough on a lightly floured work surface to a thickness of 1 inch.
  5. Stamp out hearts with heart shaped cutter. 
  6. Bake in a preheated oven at 175C, for 15- 20 minutes.
  7. You can dust them with a little caster sugar or decorate it with royal icing.

Nutella Rolls


We just love the taste of nutella....!!!!  
Be it with ... Crepe or just spread it on bread or Biscuits or .....



Ingredients:

  • 1 egg 
  • 100 grams butter
  • 1  heaped cup flour
  • 1 tsp vanilla essence
  • 1/2 sugar
  • Nutella to spread
Method:


  1. Mix butter and sugar until creamy.
  2. Mix the egg and the vanilla essence. The mixture should combine all of them.
  3. Mix the flour. 
  4. Preheat the oven at 175C/350F.
  5. Refrigerate the mix for 10 minutes.
  6. Roll the dough into a rectangle of 1/4 inch thick.
  7. Spread the nutella making sure u leave a little at the sides.
  8. Roll the dough.
  9. Cut into slices
  10. Lay them on a lined baking sheet.
  11. Bake them for 15 minutes.

Oreos

Sometimes wonder why... ?? Take trouble in making these cookies  when u can easily get from outside.... the answer is definitely " when u enjoy baking ... u end up trying anything...."


I found this blog cookies and cups  ..... and enjoyed browsing it. I liked this recipe since it was quite easy and looked yummy..... so here goes the recipe... n as usual changed a bit..!!!


Ingredients:

  • 1 1/4 cup flour
  • 1/4 cup cocoa ( Here I used 1/4 cup instead of 1/2 cup since I wanted to reduce the amount of cocoa)
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 100 grams butter
  • 1 cup  sugar( 1 1/2 cup sugar )
  • 1 large egg

Method:

  1. Mix all the dry ingredients until all combined.
  2. Now add the egg and butter.
  3. Mix it until it comes out as a dough.
  4. Preheat the oven 175C/350F.
  5. Make small balls  and flatten it. Place it on the baking sheet slightly apart from each other .
  6. Bake for 10 minutes.
  7. Cool it before filling.
For Filling:
  • 2 tbsp butter
  • 2 tbsp vegetable shortening
  • 1 cup icing sugar
  • 1 tsp vanilla essence
  • 1 tbsp water

Cream butter and shortening at high speed. Then add icing sugar , vanilla essence and water. Beat it again on high speed for another 5 minutes. Now put the filling the in between two cookies and sandwich them .
And the end result is.........

Sugar Cookies Turned into Treats


I
ngredients:
  • 230 grams flour
  • a pinch of salt
  • 1 tsp vanilla extract
  • 110 grams of unsalted butter at room temperature
  • 150 grams sugar
  • 1 large egg

Method:

  1. Preheat the oven at 175C/350F.
  2. Line a baking tray with parchment paper.
  3. Place the butter and sugar in a bowl and beat until light and fluffy.
  4. Add the eggs , vanilla extract and beat until combined.
  5. Add all the dry ingredients and beat until you have smooth dough.
  6. Place the dough in a plastic wrap and refrigerate for about one hour or until firm enough to roll.
  7. Remove the dough and on a floured surface roll out to the thickness of 1/4 inch.
  8. using cookie cutters cut out the shapes you want and bake them for 10 minutes.
  9. Remove from the oven and let it cool.
Royal Icing:
  • 1 cup icing sugar
  • 3/4 tbsp Meringue Powder
  • 2 tbsp of water 
Beat all ingredients until icing peaks. To thin , add 1/2 tsp of water at a time until the until you reach proper consistency.
In case you need chocolate icing then add cocoa until you reach the required colour.

Chocolate Chip Cookies





The recipe is adapted from the book  'What 's cooking chocolate'.  This is sure  to be a favourite as the basic recipe which can be used to make several variations.

Ingredients:

  • 1 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 cup soft margarine
  • 1/2 brown sugar (in case you don't have use caster sugar)
  • 1/4 cup caster sugar
  • 1/2 tsp vanilla flavouring
  • 1 egg
  • 2/3 cup ( 125 grams)  chocolate chips

Method:
  1. Lightly grease baking trays.
  2. Place all the ingredients in a large mixing bowl and beat until well combined.
  3. Place tablespoonfuls of the mixture on the baking trays, spacing them well apart to allow for spreading during cooking.
  4. Bake in a preheated oven, 190C/375F , for 10 - 12 minutes or until the cookies are golden brown.
  5. Using a palette knife  transfer the cookies to a wire rack to cool completely.

Variations
  • For Choc & Nut cookies , add 1/2 cup of hazelnuts to the basic mixture.
  • For Double Choc cookies , beat in 40 grams of melted dark chocolate.
  • For White Chocolate chip cookies, use white chocolate instead of the dark chocolate chips.
