Pineapple upside down cake


Ingredients:

For the topping

  •  mini cake mould tins or  cake tin
  • 10 slices of canned pineapple
  • 50 grams of butter
  • 1/2  cup brown sugar
  • cherries if you have
For the Cake
  • 1  1/3 cup flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup sugar
  • 1 large egg
  • 1/2 cup milk
  • 50 gms butter
  • 1 tsp vanilla essence
Method:
  1. In a bowl mix flour, baking powder and salt.
  2. To this mixture add the milk, sugar, eggs, butter and vanilla essence.
  3. Beat with a mixture for a minute.
  4. Beat it until the mixture turns the colour.
  5. Keep aside.
  6. Melt butter and brown sugar.
  7. Then divide the mixture in all the moulds.
  8. Place pineapple on top  & cut depending on the size.
  9. Preheat the oven for 10 minutes @ 175C.
  10. Pour the batter into the moulds. 
  11. Bake for 20-30 minutes until toothpick comes out clean.
  12. Once baked, run a knife around the edges of the cakes.
  13. Invert the cakes into a plate.
  14. Serve warm, with a scoop of ice cream.

2 Ingredient Chocolate Cake

What you need:

  • 4 eggs
  • 225 grams  milk or semi sweet  chocolate chip
  • any icing or powder icing sugar to decorate 
Method:

  1. Melt the chocolate chip in low flame. Keep aside.
  2. separate the egg yolk and white in two bowls.
  3. Add the egg yolk one by one whisking to combine.
  4. Beat the egg white until soft peaks form.
  5. Using a spatula gently fold in little by little the egg white into the chocolate mixture.
  6. Preheat the oven to 175C for 10 minutes.
  7. Pour the mixture into a greased pan.
  8. Bake for 25 minutes or until a toothpick comes out clean.
  9. Serve with ice cream.

One bowl white chocolate brownie turned into chocolate brownie

What u need:


  • 1 stick of butter
  • 85 grams of chocolate chip or white chocolate chip
  • 150 grams or 3/4 cup sugar 
  • 2 eggs
  • 1 tsp vanilla essence
  • 1/4 tsp salt
  • 1/2 cup chocolate chip optional
Method:

  1. Melt butter and sugar on slow flame in a bowl.
  2. Once melted remove from the heat and add sugar.
  3.  Whisk the sugar until its completely combined.
  4. Then add the eggs and vanilla essence and mix well.
  5. Whisk in the flour and then fold in the  chocolate chip until combined .
  6. Preheat the oven @175C for 10 minutes.
  7. Pour the batter into a pan evenly.
  8. Bake for 25 minutes until a tooth comes out clean.
Topping if you need:
  •  200 grams icing sugar
  • 1/2 cup butter
  • 1/4 cup cocoa butter
  • 1 tsp vanilla essence
  • few tsp of water    
        • Beat the butter in a medium speed, gradually add the icing sugar and cocoa powder alternatively with vanilla essence and water.
        • once all added beat until creamy and all well combined.
        • Frost the brownies before cutting into squares.

Coffee Cupcakes

I always wanted the coffee flavour to be strong in the cupcakes.  One of the bloggers suggested not to  add brown sugar as it could take over the flavour of coffee in  the cupcakes. Decided to take her advice. Another blogger advised  to add more of instant coffee.

The result is moist, delicious and the coffee flavour..!!


What you need:

  • 110 grams butter
  • 1 cup sugar
  • 2 eggs
  • 3 tbsp instant coffee
  • 2 tbsp hot water
  • 1 cup milk
  • 1 tsp vanilla essence
  • 2 cups flour
  • 1 tsp baking soda




Method:
  • Beat butter and sugar until well light and fluffy.
  • Then add two eggs into into it and beat well.
  • Mix the three tbsp coffee powder with two tbsp hot water into a paste and then dilute with milk.
  • Add vanilla essence.Add keep aside.
  • Add flour into the eggs mixture and keep beating light.
  • Slowly add the coffee mixture into it.
  • Beat until the batter is mixed properly.
  • Preheat the oven @175C for 10 minutes.
  • Scoop the batter into the muffin tray on cupcake liners.
  • Bake for 15-20 minutes or until a tooth pick comes out clean.
  • Allow it cool .
  • If you enjoy decorate with coffee butter cream.

Avocado Fudge Brownies

Did  you ever know that avocado can be replaced for butter!!!
Avocados are packed with minerals and vitamins. Avocados can reduce your intake of unhealthy calories. By substituting avocado for butter in your baking you will be reducing the calorie intake.

Ingredients :
  • 2-3 avocado
  • 1/2 cup honey
  • 1 tsp vanilla essence 
  • 3 eggs 
  • 1/2 cup flour
  • 1/2 cup cocoa powder
  • a pinch of salt
  • 1 tsp baking soda







Method:

  1. Smash the avocado using a hand held mixi.
  2. Then add honey into it and beat well.
  3. Vanilla essence into it and beat.
  4. Add the 3 eggs and mix well.
  5. Add flour , cocoa powder and baking soda and beat well until well batter is properly mixed.
  6. Preheat the oven 175C for 10 minutes.
  7. Pour the batter into a pan and level it. 
  8. Bake it for 20 minutes or until the toothpick comes out clean.
  9. Cool and serve with ice-cream .

Chocolate chip Coffee Cookies



As it is the month of exams, my daughtie wanted to have cookies. She loves the smell of coffee and wished to have chocolate chip cookies.



So I looked into my book collection and thought the easy way is to surf. And I tumbled into a blogger's site who also made these cookies 's for someone who like coffee.

These Cookies are  definitely approved by my daughtie.


What I need to mix:


  • 1/2 cup butter
  • 1/2 sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 4 tbsp instant coffee granulated
  • 1 tbsp water
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips
Method:

  1. Whisk flour, baking soda, baking powder, 2 tbsp coffee powder and salt. 
  2. Set a side.
  3. Beat butter.
  4. Whisk in sugars until combined.
  5. Add the eggs beat until well mixed.
  6. Mix 2 tbsp coffee powder with 1 tbsp water.
  7. Then add into the wet ingredients and mix well.
  8. Add the dry mix into the wet mix , fold well.
  9. Last add the chocolate chips into the mix well.
  10. Scoop the dough into a baking  tray. 
  11. Bake in a preheat oven @ 175C for 10 -15 minutes.
  12. Allow to cool on the tray for another 10 minutes.


For the Coffee drizzle:

  • 1/2 tsp coffe powder
  • 1tbsp water 
  • 1/2 cup icing sugar
            • Dissolve the coffee into water.
            • Add the icing sugar and mix until smooth.
            • Drizzle over the cooled cookies.

Spice Cookies

What I need to bake:


  • 45 gms butter
  • 60 gms sugar
  • 1/2 baking soda
  • 40 ml water
  • 150 gms wheat flour
  • 3/4 tsp  ground cinnamom
  • 1/2 tsp cocoa powder
  • 1/2 tsp ground ginger
How I mix:
  1. Cream butter until light and fluffy, then add sugar.
  2. Dissolve baking soda in water. 
  3. Stir in dissolved soda one third or one quarter at a time.
  4. Fold in sifted dry ingredients   with wooden spatula.
  5. Place dough in plastic bag and refrigerate for 30 minutes.
  6. Roll out dough into 3 mm thickness on floured surface. cut out with cutters.
  7. Make stars patters or any other pattern.
  8. Place on baking tray  and bake @ 175 for 15 minutes.
For Icing:
  • Sift icing sugar(1/2 cup) in a bowl.
  • Add few drops of flavouring or colour if you like.
  • Stir  in water as required until smooth and the required consistency
  • Decorate the way you want.
