Ingredients:
Decorate with the icing.
- 1 3/4 cup flour
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 extra large eggs
- 2 tsp vanilla essence
- 1 cup of hot water
Method:
- Sift the flour, sugar, cocoa powder, baking powder, baking soda and salt into the bowl and mix until combined.
- In another bowl mix buttermilk, eggs and oil.
- With the mixer on low speed, slowly add the wet ingredients to the dry.
- With the mixer still on low and the water , stir to just to combine scraping the bottom of the bowl with a rubber spatula.
- Pour the batter into two 8 inch round cake tin.
- Bake @ 175C for 40-45 minutes, until a cake tester comes out clean.
- Cool in the pan for 30 minutes , then turn them out onto a cooling rack and cool completely.
Decorate with the icing.
