Ingredients:
For Frosting( really wanted to frost the cupcake this time .... !!)
- 2 1/4 cup flour
- 2 cups granulated sugar
- 1 cup unsweetened coco powder
- 2 tsp baking soda
- 1/2 tsp salt
- 2/3 canola oil
- 2 tsp white vinegar
- 1 cup coffe
- 1 cup hot water
For Frosting( really wanted to frost the cupcake this time .... !!)
- 1/4 cup shortening
- 2 cups confectioners sugar
- 1/4 tsp clear vanilla extract
- 1-2 tsp water
Instructions:
- Preheat the oven 185C.
- In a large bowl, sift the dry ingredients together. Set aside
- In a medium bowl, mix the vanilla extract, oil, vinegar, coffee and water.
- Slowly whisk the wet ingredients into the dry, be careful not to over mix.
- Scoop the batter into the cupcake pan.
- Bake for 20 minutes.
- Cool in the pans for 10 minutes.
Frosting:
- Cream shortening and vanilla in a bowl for 2-4 minutes.
- Add in powder sugar, one cup at a time.
- Use water for a creamy consistency, use less water for a stiff consistency.
