Death by Chocolate Cupcakes

Ingredients:

• 1/2  cup(113 gms) butter
• 1/3 cup chocolate chips
• 1/2 cup cocoa powder
• 3/4 cup all purpose flour
• 1/2 tsp baking soda
• 3/4 tsp baking powder
• 1/2 tsp salt
• 2 large eggs at room temperature
  
• 1/2 cup sugar
• 1/4 cup light brown sugar
• 1 tsp vanilla essence
• 1/2 cup buttermilk

Method:

1. Melt the butter and chocolate chips over low heat and until smooth. Keep aside.
2. Add both sugars and whisk well.
3. Once cooled add the eggs and vanilla essence and mix well.
4. In a medium bowl sieve the dry ingredients.
5. Add the cooled chocolate/egg mix.
6. Mix buttermilk into it.
7. Stir until  just combined.
8. Do not over mix.
9. Preheat the oven 175C for 10 minutes.
10. Pour the batter into the cupcake cake liners using ice cream scoop.
11. Bake for 20 minutes or until a toothpick comes out clean.
