3 Medium potato 1/2 glass water Wash the potatoes and cook in cooker with water for 2 whistles. And wait until the pressure goes off. Drain the potatoes, remove the skin and mash them. Keep it aside.
2 tbsp oil 1/2 tsp mustard seeds few curry leaves. Heat oil in pan. Add mustard seeds and when it splutters add curry leaves.
1/2 chopped onion 1tsp chopped ginger 3 chopped green chillies salt Add chopped onions, ginger and green chilies Add salt and saute them in a medium flame. Let the raw smell go and reduce the heat.
1/2 tsp turmeric 1/2 tsp chilli powder Add the turmeric and chilli powder. Saute till the raw smell goes. Add the mashed potatoes and cook. Let it cook for 5 minutes Mix well and remove from the flame. Once cooled make small balls. Keep it aside.
1 cup gram flour 2 tbsp rice flour salt to taste pinch of asafoetida 1/4 tsp chilli powder Mix gram flour, rice flour, salt and hing well
1 cup water Now add water little by little and mix well. To make a batter.
Oil for frying Heat a oil in a kadai. Once the oil is hot Deep the balls in the batter by rolling all sides. Drop them into the hot oil. Fry them in a medium flame and until its reaches the perfect golden brown color. Transfer them into a strainer. Enjoy cooking

2 Medium onions Slice the onions very thinly and length wise.
1/2 cup besan 2 tbsp rice flour 1tsp chili powder 1/2 gram masala 1/2 tsp turmeric powder salt to taste 1 tsp baking powder Add besan, rice flour, chili powder, gram masala powder, turmeric, salt and baking powder and mix well
2 green chilies few strands of coriander leaves. Add the onions, green chillies and coriander leaves. Mix well.
2 tbsp oil. Add the oil and mix well. Add water just enough to make a thick paste. Prepare your air fry with baking sheet paper and brushing it with oil. Scoop using small ice cream scoop the batter and lay them on the tray with space in between. Cook them at 185C for 10 to 15 minutes. If needed spray with oil and turn the side. Cook until it turns brown and crispy.

1/2 cup semolina Soak in water for 10 minutes and then wash well.
1/2 litre milk 1/2 cup sugar Boil with semolina and add sugar into it. Reduce heat, cook until it thicken.
2 strands of saffron 1 tsp of rose water. Add saffron and rose water into it. Remove from heat. Pour in a flat bowl.
1 tbsp ghee 5 cashew nuts 5 kismis Heat ghee and then fry chopped cashew nuts int it. once it turns golden brown add rasins. Remove from the heat. Pour over the semolina mix. Keep in the refrigerator before serving. Enjoy cooking

Plantains(Kerala banana) need to be ripe. Slice them twice, so you get four long pieces ( I always remove the veins(the black part) of this ) and then chop them into small 1/2 inch size.
Heat ghee in a pan. Fry the cashew nuts until light golden brown and keep it aside. Then fry the raisins until plump and keep it aside. 2 tbsp ghee 6 cashew nuts split into 2 6 raisins
Add more ghee , Now add the chopped plantains and fry until golden brown in color.
Beat the eggs and sugar well with a little pinch of cardamom.
Mix the fried plantains with a egg mixture with a pinch of baking powder. Preheat a oven at 175C for 10 minutes. Pour the mixture and put the nuts on top. Bake for 15 minutes until a tooth pick comes out clean. Flip it over a plate before serving.
