Ambur Biriyani

 

  • 10 tbsp oil
  • 5 tbsp ghee
  • 2 cardamom
  • 4 cloves
  • 2 pcs cinnamom
  • 3 bay leaves
  • 2 onions sliced
  • 90 grams garlic paste
  • 90 grams ginger paste
    • Heat the pot(or can use a pressure cooker) add oil and ghee.
    • Then add cardamom, cloves, cinnamon, cloves and bay leaves.
    • Saute for a minute.
    • Then add thin sliced onion.
    • Add garlic paste and saute for 5 minutes
    • Saute until the raw smell goes.
    • Then add ginger paste
    • Saute again for few minutes.
      • 20 grams dry red chillies
        • Soak the red chillies in hot water for few minutes.
        • Grind the paste.
    • Add the paste into the pot and saute for 5 minutes.

  • 5 onions sliced
  • 400 gms tomato
  • 1/2 cup coriander leaves
  • 1/4 cup mint leaves
    • Add the sliced onion into it.
    • Saute for 5 minutes.
    • Clean and cut the tomatoes and add into it.
    • Add chopped coriander leaves into it.
    • Saute for another 5 minutes.
    • Add the chopped mint leaves.
    • Saute for another 10 minutes.

  • 1 Kg mutton
  • Salt to taste
    • Cut and wash the mutton well.
    • Add the mutton into the pot.
    • Saute for 10 minutes.
    • Add salt to taste.
    • Mix well.

  • 250gms curd
  • 1 lime
    • Add curd and lime juice into the pot.
    • Mix all and check the salt.
    • Let it cook for 30 minutes on slow sim (can be cooked in the cooker for 6 whistles).
    • Add 1 liter boiled water and cook until the mutton is cooked.

  • 1 kg jeerkashala rice
  • 2 1/2 litrs water.
  • 1/2 cup coriander leaves
    • Wash the rice and keep it soaked for 10 minutes.
    • Boil water in another pot.
    • Add coriander leaves.
    • Add rice into the water.
    • Cook for 2 to 3 minutes.
    • Once half cooked , drain the water using a strainer.
  • Add the rice into the cooked mutton masala.
  • Close the lid and cook until all the water evaporates in slow flame.
  • Switch of the flame. 
  • Leave it for 20 minutes before opening the pot.
  • Biriyani is ready.

Chinese Pasta

 


  • 2 white onion
  • 1 medium capsicum
  • 1 tomato
  • 3 tbsp oil
  • 10 pcs of prawns
    • Wash and cut the onions, tomato and capsicum into medium sizes.
    • Heat oil.
    • Saute the above vegetables until soft.
    • Add the prawns cut into half into the pot.
    • Cook for few minutes.

  • 3 tbsp chilli paste
  • 2 tbsp soy sauce
    • Add the chilly  paste and soya sauce into the pot.
    • Cook for sometime and keep it aside.

  • 2 cups penne pasta
  • 1 tbsp oil
  • 1 tsp salt
    • Boil water and pour over the pasta.
    • Add oil and salt.
    • Cover and keep aside.
    • After 10 minutes drain the water from the pasta.
  • Add the pasta into pot with vegetables and mix well.
  • Add salt to taste.
  • 2 spring oninos
    • Cut the spring onions into small rounds.
    • Add them into the pot.
    • Simmer for few minutes.

Moru Curry

  • 4 green chillies
  • 4 small onion
  • 1 tsp cumin jeera 
  • 1/2 tsp turmeric powder
  • 1/2 cup coconut
  • few curry leaves
  • 1 cup curd
    • Grind the above ingredients to  a paste.
    • Add 1/4 cup  curd and grind again.  
    • Add remaining curd and 1/4 cup water .
    • Grind it once.
    • Pour the mix into a deep pan.
    • Keep stirring.
    • Allow the mix to just boil and switch off the flame.

  • 2 tbsp coconut oil
  • 1/2 mustard seeds
  • 1/4 tsp fenugreek seeds
  • 4 dried red chillies
  • 4 small onions sliced.
  • few curry leaves
  • salt to taste
    • In a small pan heat oil.
    • Add mustard seeds, then fenugreek and red chillies.
    • Add sliced onion and fry until light brown.
    • Add curry leaves.
    • Add this into the curd mix.
    • Add salt to taste.
    • Keep it closed for few minutes before serving.

Airfryer cupcake

Ingredients:

  • 1/2 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp cocoa powder
  • 1/4 tsp baking soda
  • 1/4 cup sugar
  • 1 tbsp honey 
  • 2 tbsp yogurt
  • 4 tbsp milk
  • 2 tbsp vegetable oil
  • 1/2 tsp vanilla extract
  • 1 tsp Apple cider or normal vinegar
  • 2 tbsp chocolate chips
Method:

  • Remove one tbsp flour and then add 1 tbsp cocoa powder.
  • Then add baking powder and salt.
  • Add baking soda and sugar and combine with a fork.
  • In a jug whisk together oil, milk, yogurt and vanilla essence.
  • Make a hole in the dry ingredients and then add the wet ingredients.
  • Then add vinegar.
  • Mix to combine all. Do not over mix.
  • Add in the chocolate chips.
  • Scoop the mix into muffin moulds or just into cupcake liners.
  • Preheat the airfryer  @ 200 for 5 minutes.
  • Then place them into the wire basket and set the timer to 8.
  • If the toothpick comes out clean after the given time then you can remove them.
  • Cool them before serving.

Strawberry Jam



  • 200 grams strawberry
    • Wash well and cut into small pieces.

  • 200 gms sugar
  • 1 lime
    • Mix the cut strawberry pieces with the sugar. 
    • Add lime into it.
    • Heat it in a heavy bottom sauce pan.
    • Stir until the sugar is dissolved.
    • Bring it to boil stirring continuously.
    • Cook until the liquid reduces into a jam consistency.
    • Pour the jam into a cleaned sterilized bottle.
    • Once it cools then refrigerate it.
