Tamarid Chutney

 

Tamarind Chutney is a sweet and sour sauce.  It is also know as imli chutney. Tamarind is responsible for that punchy sourness. One can serve with samosas or drizzle over chats.


Ingredients:

  • 1 cup dry tamarind pulp ( washed)
  • 1 cup Jaggery
  • 1/2 tsp pepper
  • 1 tsp chilli powder
  • 1/2 tsp ginger powder
  • 3/4 tsp cumin powder
  • 1/2 tsp salt

Step by Step:
  1. Wash one cup tamarind pulp and water.
  2. Soak the tamarind in two cups of boiling water.
  3. Mash the soaked pulp with water to release all the pulp.
  4. Strain the pulp through a strainer.
  5. Boil the tamarind water .
  6. When it starts to boil add jaggery, pepper, chili powder, ginger powder, cumin powder & salt.
  7. Cook on a slow flame until the sauce thickness. (The thickness depends on how much you want)
  8. Cool the sauce. 
  9. Store in air tight container . It can be refrigerated  for 2 weeks.
