Tamarind Chutney is a sweet and sour sauce. It is also know as imli chutney. Tamarind is responsible for that punchy sourness. One can serve with samosas or drizzle over chats.
Ingredients:
- 1 cup dry tamarind pulp ( washed)
- 1 cup Jaggery
- 1/2 tsp pepper
- 1 tsp chilli powder
- 1/2 tsp ginger powder
- 3/4 tsp cumin powder
- 1/2 tsp salt
Step by Step:
- Wash one cup tamarind pulp and water.
- Soak the tamarind in two cups of boiling water.
- Mash the soaked pulp with water to release all the pulp.
- Strain the pulp through a strainer.
- Boil the tamarind water .
- When it starts to boil add jaggery, pepper, chili powder, ginger powder, cumin powder & salt.
- Cook on a slow flame until the sauce thickness. (The thickness depends on how much you want)
- Cool the sauce.
- Store in air tight container . It can be refrigerated for 2 weeks.
