Brownies by cookies & cups

Ingredients:

  • 1/2 cup butter melted
  • 1/4 cup cocoa powder
  • 2 eggs
  • 3/4 tsp vanilla
  • 1 cup sugar
  • 1 cup flour
For Frosting:
  • 1/4 cup butter, room temperature
  • 1/4 cup cocoa powder
  • 1/4 cup water
  • 2 1/2 cups powdered sugar
Method:
  1. In a bowl of stand mixer combine melted butter and cocoa powder, mix on medium speed.
  2. Add eggs and vanilla.
  3. Beat until thickened and smooth.
  4. Add in sugar.
  5. Beat until well mixed and add in flour.
  6. Mix until combined.
  7. Preheat the oven @ 175C for 10 minutes.
  8. Spread in a pan and bake for 20 minutes.
Frosting:

  1. While the brownies are baking , prepare the frosting.
  2. Beat butter and cocoa powder tother.
  3. Add in water.
  4. Add the powdered sugar and beat until smooth.
Allow the brownies to cool for about 10-15 minutes and then spread the frosting.
The brownies will still be warm. Allow brownies to cool completely before cutting into squares.

Chicken Masala

Ingredients:

1 chicken
5 onion
2 tomatoe
2 tbsp ginger
2 tbsp garlic
10 green chillies
3 tbsp pepper
2 tbsp coriander powder
2 tsp garam masala
salt to taste
1/2 bunch coriander leaves
1/2 bunch mint leaves

Method:

Slice onions into very thin slices.
Chop the tomatoes.
Crush ginger, garlic and green chillies in a chopper.
Chop the leaves and side aside.

Heat 4 tbsp oil in deep pan.
Add onions and saute until golden brown.
Add the tomatoes saute until very soft.
Add the ginger , garlic and green chillies and saute for few minutes
Add the the chicken and fry for 3 minutes.
Add coriander powder , pepper crushed or powder and garam masala.
Add salt and the rest of the leaves. if needed add 1/2 cup water.

Cook until chicken is cooked and water is absorbed.
Add oil if need and fry for few minutes more.

Laura's Chocolate cupcake

Ingredients:

  • 100 grams butter
  • 3/4 cup caster sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 cup flour
  • 1/2 cup cocoa
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 cup buttermilk
Method:
  1. Cream butter and sugar.
  2. Add the egg and vanilla essence and whisk until smooth.
  3. Sieve flour, cocoa, baking powder , baking soda and salt.
  4. Add the dry ingredients mix until smooth.
  5. Add the buttermilk and mix quickly so u don't over mix
  6. Preheat the oven @ 175C/350F .
  7. Scoop the batter, fill the muffin liner upto 1/2 using ice-cream scoop.
  8. Bake for 20 minutes or until a tooth pick comes out clean.

Strawberry Crush

Before I forget the recipe let me share ....

Quick and refreshing drink

Ingredients: ( for 3 Glasses)

10 Strawberry
10 Mint leaves
15 tbsp sugar
1 gingerly soda

Method :
Mix in a grinder strawberry, Mint and sugar well.
Add soda before serving in a glass.


Devil's Food Cake



  • Makes a double -layer 8" cake .
Ingredients:
  • 1 1/2 stick or 175 grams butter softened
  • 1 3/4 cup  or 350 grams sugar
  • 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 2 tsp vanilla essence
  • 2 cups or 240 grams flour
  • 3/4 cup or 65 grams coco power
  • 4 large eggs
  • 1 1/2 cup milk
Method:
  1. In a large mixing bowl, cream  softened butter, sugar, salt , baking soda and the vanilla until fluffy.
  2. In another bowl , whisk together the flour and coco making sure no lumps remain.
  3. Beat in the eggs to the butter mixture, one at a time. Beating well after each addition.
  4. Slowly blend 1/3 of the flour, mixture into the creamed mixture.
  5. Then add 1/2 of the milk and so on until all the dry ingredients and the milk have been beaten in.
  6. Scraping the sides as needed.
  7. Divide the batter evenly between the pans and smooth.
  8. Preheat the oven @ 175C. Line the pans with butter paper.
  9. Bake the cake in the oven for 35 mts or until the toothpick comes out clean.
  10. Remove the cakes from the oven and allow to cool.
Ready to eat a warm chocolate cake or frost with icing !!!

Spicy Prawn Briyani

Ingredients:

  • 1/2 kg prawns
  • 1medium onion
  • 1/2 tomatoe
  • 2 tbsp ginger and garlic
  • 10 green chillies sliced
  • 1 tbsp chilli powder
  • 1 lime
  • 1/2 bunch coriander leaves
  • salt to taste
  • Oil/ghee 
  • 3 cups of rice (basamathi rice )
Method:

Heat 5 tbsp of oil in a deep vessel.
Saute onion  until brown.
Add tomatoe and saute until oil break out.
Add ginger and garlic paste and fry for few minutes
Add green chillies and fry for 2 minutes
Add the prawns and fry for few minutes.

Add the rice and double the quantity of  boiled water.
Let it cook on slow flame.

When almost cooked, sprinkle little garam masala.

When the water is absorbed completely, one can serve with chutney or papad....!!

Meat Cutlet...

Ingredients:


  • 1 1/2 cup Minced mutton cooked or left over mutton from the gravy( if using left over mutton then u need mince them)
  • 2 Medium sized potato
  • 1 tsp ginger-garlic chopped
  • 1 Onion chopped
  • 3 Green Chilles
  • 1 tsp Turmeric powder
  • 1/2 Bunch coriander leaves 
For dipping and frying:
  • 1 Egg
  • Bread Crumbs
  • Oil for frying
Method:

Boil potato with skin.
Once cooked remove the skin and mash it. Keep it aside.

Heat a pan with 2 tbsp of oil.
Add the chopped onion and saute for few until soft.
Add ginger- garlic.
Add the green chillies, turmeric and salt and saute for few minutes.
Add the minced mutton and chopped coriander leaves and mix well.
Remove from heat.

Add the cooked and mashed potato.
Mix well.

Make small lime size balls and keep aside

Beat the egg in a bowl and keep aside.

Flatten each ball and deep in the egg.


Cover it with breadcrumbs.
Deep fry in hot oil.

Drain the oil and serve.

George Town cupcake.... The famous sisters...!!


Its been a long time ... keep disappearing now and then ... wish I was regular.. in my posts.

As for this post... been hearing a lot about a George town cupcake  & a lot on FB status...... as u all do , did  a bit of surfing and found one of their recipe on chocolate cupcake with Ganache ....

As for the cupcake it turned out to be perfect....!!

Ingredients:


  • 1 1/4 cup flour
  • 8 tbsp butter they suggest European style unsalted one
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cup sugar
  • 2 large eggs @ room temperature
  • 1 1/4 tsp vanilla extract
  • 1 cup whole milk
  • 1/2 cup good quality of cocoa powder



For the Ganache Frosting

  • 1/2 cup heavy cream
  • 1 cup of semi - sweet chocolate chip



Method:


  1. Sift the flour, baking soda and salt and keep it aside.
  2. Place the butter in a bowl & beat on medium speed until fluffy.
  3. Stop beating and add sugar and beat on medium speed until incorporated.
  4. Add the eggs one at a time , mixing slowly after each addition.
  5. Reduce the speed.
  6. Add little of flour mixture and milk mixture.
  7. Scrape the bowl and repeat adding the flour mixture and milk.
  8. Beat just until combined.
  9. Add cocoa powder and mix it.
  10. Preheat the oven at 175C for 10 minutes.
  11. Scoop the mixture to fill the cupcake paper until 2/3 full.
  12. Bake for 20 minutes or until a toothpick comes out clean.
  13. Cool before frosting.
For the Ganache:
 Lay a large piece of paper on wax paper.

Combine the cream and chocolate on a bowl.
Fill a pan with water and heat on medium heat.
Place the bowl over the pan and let it melt .
Stirring until it is shinny and smooth.

Remove the bowl and let it cool.
Carefully dip each cupcake top in the warm ganache.
Let it set for 5 minutes before serving.

Another Chocolate Brownie


Ingredients:



  • 150g semi sweet chocolate
  • 1 stick butter
  • 1 c sugar
  • 2 tbsp cocoa powder
  • 3 eggs
  • 3/4 c flour
  • 1/4 tsp salt
  • 1 tsp vanilla

Method: 


  1. Preheat the oven to 350 F/ 180C and line an 8 inch square baking tin.
  2. In a large stainless steel bowl, melt chocolate and butter together. 
  3. Add sugar + cocoa powder and whisk together. 
  4. Add in the eggs one by one and whisk till they are just mixed. 
  5. Fold in flour + salt . 
  6. Add the vanilla. 
  7. Pour the batter into the prepared tin and bake for 25 -30 mins or until a toothpick inserted into the centre comes out with a few moist crumbs.
