Ingredients:
- 2 cups flour
- 3/4 cup Ghiradelli Unsweetened cocoa
- 1 tsp baking powder
- 1tsp baking soda
- 1/2 tsp salt
- 1 cup butter softened
- 1 3/4 cup sugar
- 2 tsp vanilla essence
- 2 large eggs
- 1 1/3 cup milk
Method:
- In a medium bowl combine flour, cocoa, baking powder, baking soda, and salt and set aside.
- In a large bowl cream butter and sugar on medium high speed until light and fluffy.
- Reduce speed to a low, add vanilla essence.
- Add eggs one at a time , scrapping bowl after each addition.
- Add flour mixture and milk , while mixing with on slow speed.
- Continue to mix until smooth.
- Preheat the oven to 175C.
- Fill the liners with 2/3 full of batter .
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Cool 10 minutes .
- If you wish frost the cupcakes once cooled
