Broccoli Soup



  • 500 grams broccoli
  • 1 potato
    • Clean and cut the broccoli into small pieces
    • Cut the potato in small cubes.
  • 2 cloves of garlic
  • 1 tbsp butter
    • Salt and pepper
    • Melt a tbsp of butter in a pot at medium flame.
    • Add potatoes, garlic, broccoli in the butter and saute for few minutes.
  • 2 cups of water
    • Add 2 cups of water and boil for another 10 minutes.
    • Let it cool and puree the soup using a blender.
    • Pour back into the pot and simmer for few minutes.
    • Add salt and pepper before serving.

Note: if one need to add cream , they may do so before simmering( 2 tbsp).

Easy chocolate cup cake

Ingredients:

  • 2 1/4 cup flour
  • 2 cups granulated sugar
  • 1 cup unsweetened coco powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 canola oil
  • 2 tsp white vinegar
  • 1 cup coffe
  • 1 cup hot water


For Frosting( really wanted to frost the cupcake this time .... !!)

  • 1/4 cup shortening
  • 2 cups confectioners sugar
  • 1/4 tsp clear vanilla extract
  • 1-2 tsp water
Instructions:
  1. Preheat the oven 185C.
  2. In a large bowl, sift the dry ingredients together.  Set aside
  3. In a medium bowl, mix the vanilla extract, oil, vinegar, coffee and water.
  4. Slowly whisk the wet ingredients into the dry, be careful not to over mix.
  5. Scoop the batter into the cupcake pan.
  6. Bake for 20 minutes.
  7. Cool in the pans for 10 minutes.
Frosting:
  1. Cream shortening and vanilla in a bowl for 2-4 minutes.
  2. Add in powder sugar, one cup at a time.
  3. Use water for a creamy consistency, use less water for a stiff consistency.
