Baked Mini Donut Muffins

Ingredients:

  • 1 cup flour
  • 3 tbsp coco powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 50 grams butter melted
  • 1/2 Milk chocolate chips (Or Dark chocolate)
  • 1/2 tsp Instant coffee powder
  • 1tsp vanilla essence
  • 1/2 cup brown sugar
  • 1/2 yogurt + 1/2 tbsp vinegar  (mix leave for 5 minutes)
  • 1 egg yolk
Method:
  1. Combine flour, cocoa powder, baking soda, baking powder and salt . Keep it aside.
  2. Melt butter with chocolate chips  and coffee powder on a slow flame.
  3. Once melted remove from the heat.
  4. Add the brown sugar  and vanilla essence , mix well.
  5. Then add the yogurt mix and mix well.
  6. Last add the yolk and whisk well.
  7. Add the wet ingredients into the dry and stir well until well combined.
  8. Preheat the oven for 10 minutes @ 175C.
  9. Scoop the mini ice cream scoop and drop into the pans.
  10. Bake for 10 minutes.
  11. Once cool you can dip into a glaze as from I am baker or you can enjoy without any glaze !!!

Classic Chocolate cupcake


Once again Totally agree with sally of Sally's baking addiction  that you will find every excuse to make this classic chocolate cupcake again and again.!!!


Ingredients:

  • 1/2 cup cocoa powder
  • 3/4 cup flour
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cup caster sugar
  • 1/2  cup brown sugar
  • 1/3 cup vegetable or canola oil
  • 2 tsp vanilla essence
  • 1/2 cup butter milk

Method:
  • Whisk the cocoa powder, flour, salt, baking soda and baking powder in a large bowl until throughly combined.
  • In a bowl whisk eggs, sugar , brown sugar,oil and vanilla essence until well mixed.
  • Pour half of the wet ingredients into the dry ingredients.
  • Then half of the buttermilk.
  • Gently whisk for few minutes.
  • Repeat the wet ingredients and buttermilk. 
  • Combine all and do not over mix.
  • Preheat the oven 175 C for 10 minutes.
  • Fill the muffin tray with cupcake liners. 
  • Pour only half and bake for 20 minutes.
  • Allow the cupcake to cool in case one is frosting.

Baked Donuts

Totally agree with Sally  of Sally's baking addiction these chocolate donuts are simple to make and they are baked not fried....!!!






Ingredients:

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg( optional)
  • 1 large egg
  • 1/3 cup light brown sugar
  • 1/4  cup milk
  • 1/4 cup yogurt
  • 2 tbsp melted butter ( I used margarine)
  • 1 1/2 tsp vanilla essence
 For the Frosting:
  • 1/2 cup semi sweet chocolate chips
  • 2 tbsp butter
  • 2 tsp light corn syrup 
  • 2 tsp water
Method:

  1. Whisk the flour, baking powder, baking soda and nutmeg together. Set aside.
  2. Whisk the egg, brown sugar, milk and yogurt until smooth.
  3. Add the melted butter and vanilla. Whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and just mix. Do not over mix.
  5. Pour the mixture into a piping bag.
  6. Pipe the mixture into each donut cup and filling 3/4.
  7. Preheat the oven for 10 minutes @175C .
  8. Bake for 10-12 minutes until the edges are lightly brown.
  9. Remove from the pan and allow it cool before glazing.
  10. Bake the remaining mixture also.
Make the chocolate Glaze:
  1. Place the chocolate chips, butter, corn syrup and water on a slow flame. 
  2. Mix until completely melted and smooth.
  3. Dip the donuts into the chocolate glaze.

Midnight cookies



Ingredients:

  • 9 tbsp/ 100 g butter softened 
  • 1 cup superfine sugar
  • 1 egg lightly beaten
  • 1/2 vanilla extract
  • 1 cup all purpose flour
  • 1/3 cup cocoa
  • 1/2 baking soda





That's all left @ the time of shot...!!!

Method:
  1. Place the butter and sugar in a large bowl and beat together until light and fluffy.
  2. Add the egg.
  3. Add the vanilla extract and mix until smooth.
  4. Sift in the flour, cocoa and baking soda.
  5. Beat until well mixed.
  6. With damped hands , roll wall nut size  into balls.
  7. Place on the baking sheet spaced well apart.
  8. Preheat the oven for 10 minutes @ 175C.
  9. Bake for 10-12 minutes until set.
  10. Let it cool.
